One of the MOST common recipe requests I get is for SNACKS. Easy to make, easy to carry around, deliciously nutritious SNACKS!

So, I’m happy to deliver today… in a food allergy friendly way!

But before I get to the deliciousness, I want to chat about staying safe with food allergies… especially with back to school season upon us.

When I was growing up, I didn’t have a nut-free school environment (as is SO common now). My best friend brought a peanut butter sandwich for lunch every day throughout elementary school. There was no avoiding it!

By 8th grade, my middle school tried to create optional “nut free tables” in the cafeteria, but I didn’t sit there (and neither did my 1 other classmate with a nut allergy). How isolating is that?! Luckily by that time, everyone knew who in our grade had the nut allergies… ((insert my hands up!)) Also luckily for me, kids really respected my allergies – I don’t really recall teasing or taunting, but I know that’s not always the reality for kids with allergies.

When I was in school, allergies weren’t as prevalent as they are now. With increased prevalence, I’m hearing from more and more teachers and parents that schools are food allergy friendly… especially nut-free!

While this is AMAZING for kids with food allergies, I know it can be extra difficult for parents of children without allergies. It’s hard to truly understand the severity of allergies unless you or someone close to you suffers.

For parents of children with food allergies, opening up with other parents in your child’s class can really help bridge this gap and heightens understanding.

Help keep ALL kids safe in the classroom with these tips:

  • Clearly communicate your allergies – and their severity – to your child’s teacher.
  • Keep a stash of food allergy friendly snacks in your child’s classroom for last minute celebrations.
  • Triple up on epinephrine (in case of emergency) – in the classroom, in your child’s backpack, and at the nurse.
  • Encourage an allergy-friendly classroom space (if it’s not already). Ask your child’s teacher if you can send a note home to other parents.

No Bake SunButter Oatmeal Bites snacks, specifically.

The beginning of the school year is H-O-T HOT! My mom is a teacher and claims that it’s even hotter in September than June when her school year ends. Thank you, global warming!

And do you know what you need with scorching temperatures? To NOT turn on the oven!

So hellloooo to all the no bake snacks!

I’m a big fan of snack bites because they’re SO easy, BUT most recipes require a food processor to pulverize nuts and seeds and dried fruit.

Not these!

With less than 5 ingredients, you can make delicious, no equipment needed, bites. If that’s not hashtag winning, I don’t know what is!

I made 3 variations of bites, but the basic recipe is delicious on its own and almost too easy – with just 3 ingredients!

Rolled oats (gluten free, if needed) are a great source of SOLUBLE fiber. Fiber helps you stay FULL – which is exactly what a snack should do… bridge the time between your meals. Fiber also absorbs excess cholesterol in your blood to prevent heart disease – and YES, this is important for kiddos too! Early signs of atherosclerosis (plaques in your arteries) can start in people as young as teenagers!

Sunflower seeds and extra crunch to these bites. Sunflower seeds are a nutritious superstar, containing protein and healthy fats, some fiber, plus vitamin E and magnesium.

SunButter contains even more sunny goodness, since it’s made from sunflower seeds! It’s the perfect sticky binder in this recipe (but not too sticky!).

Be sure to stock up on SunButter before the school year starts because I have many more delicious eats and treats coming your way with this better than nut butter substitute!


Then the fun part starts and you can get creative with your add ins. I made 3 versions of these bites:

No Bake SunButter Oatmeal Bites – 3 Ways

Yield: ~24 bites

Ingredients

Instructions

  1. In a medium-sized bowl, combine oats, sunflower seeds, and salt. Add SunButter and mix well to combine. The mixture will be moist, but not too sticky, nor too dry.
  2. Depending on what flavor bites you’d like to make, mix in your add ins.
  3. Form the mixture into 1-inch balls, pressing the mixture together in the palm of your hand. Repeat until all the oat mixture is rolled into balls (you should get about 24 bites). Freeze for at least 20 minutes, or up to overnight. Enjoy!

Notes

Store bites in the refrigerator or freezer (but defrost for a few minutes before enjoying).

  3. These all look delicious! I especially love how the raspberry jam looks in the SB&J ones. I work at Children’s Hospital with a lot of food allergy nutrition studies, so these would be ideal for bringing to work 🙂

  4. Yum! I had kiddos at summer camp make a very similar version to this last week – although theirs had a lot of honey and I was required to stick to the recipe. I bet they would have loved this version just as much! I also really love that you point out the difficulty of allergies for everyone. I too have several food sensitivities and even knowing exactly what to look for, how to shop, what to make, etc., I’ve found that I’ve been overwhelmed when in the store aisle staring at options when catering to a classroom of gluten, dairy, soy, and nut allergies, and trying to find products that fit all those needs–and that weren’t processed in facilities where there’s cross contamination! For someone that doesn’t have as much experience, I can imagine just how much more challenging it would be.

    1. I couldn’t agree more… It can be so challenging for newly diagnosed individuals, parents, and friends – sometimes I wonder how my mom really navigated it all! It’s such rewarding work to help people figure it all out!
