Greek Couscous Bowls

The Super Bowl may be approaching, but this is my kinda super bowl… a Greek Couscous Bowl made with a base of fluffy couscous, a handful of spicy arugula, perfectly roasted cauliflower, and my juicy Greek yogurt-marinaded baked chicken.

This is the kind of bowl dinner that just feels amazing in your body. WHY? Because it’s a balanced dinner that can be mostly made in advance (see below for how to break it down).

It’s hard to constantly think about “what’s for dinner?” Especially when you’re a busy mom and have kids to feed. Add your own food stress and GAHHH how do you do it?

Well, balanced meals are step 1 of making dinnertime a little bit easier. Choose 1 of each from the categories below and you’re on your way to an energizing, feel good meal…

This balanced meal formula takes the thought out of mealtime so you can “plug + chug” foods that you’re in the mood for.

This Greek Couscous Bowl is 100% balanced following this formula:

  • Carbs = whole wheat couscous
  • Protein = Baked Yogurt Chicken
  • Fats = olive oil drizzle + oil for roasting cauliflower
  • Veggies = arugula, red onion, roasted cauliflower

Ingredients to Make Greek Couscous Bowls

Although there are several different components to this meal, you only need a handful of ingredients, including…

  • Couscous – I prefer to use whole wheat for more fiber (see below for notes)
  • Cauliflower
  • Olive oil
  • Spices: dried oregano, garlic powder, salt and pepper
  • Arugula
  • Red onion
  • Chicken – I used my Greek Yogurt Baked Chicken recipe for this, but you can also just use rotisserie chicken + add a yogurt sauce for extra flavor. When you use the Yogurt Baked Chicken you really don’t need any other sauce on top (keeping it simple, mama!)

Many of these ingredients can be swapped out for other similar ingredients. However, I chose these specifically because they go well together. But if you have a preference, allergy, or picky eater on your hands, feel free to adapt to what your family needs.

For instance, kids don’t like arugula, try romaine. No cauliflower to be found? Try brussels sprouts or broccoli. Get it?

What is COUSCOUS?

Couscous is a grain. It’s granules of durum wheat (the same wheat that is used to make pasta). It’s a staple throughout North African cuisines, but found in most U.S. grocery stores.

Like other grains you can find both regular couscous and whole wheat couscous. I prefer to opt for whole wheat couscous because it contains more fiber than the regular version.

Whole Wheat Couscous Nutrition Facts

One cup of whole wheat couscous contains 12 grams of fiber (about 3 grams per serving). That’s 10% of your daily fiber needs! It also contains a whopping 24 grams of protein (about 6 grams per serving). So not only is couscous a grain, but it’s packing a considerable contribution to your protein for this meal.

How to Make Greek Couscous Bowls

This is a meal of components, which means you can prepare the various components when you have time and assemble before serving.

The most time-consuming part of this recipe is making the chicken. It does require 1 hours time to marinate, so I would start with that.

When you’re ready to cook the chicken, also bake your cauliflower and prepare the couscous.

Then, you’ll be ready to assemble when the chicken is done cooking.

How to Meal Prep these Greek Couscous Bowls

This is a great recipe to meal prep because you can use leftover in other meals throughout the week too.

The night before or the morning of this meal…

  • Marinate the chicken
  • Cook your couscous
  • Cut up the cauliflower to roast (you can also pre-roast the cauliflower, if you don’t mind reheating it later)

45 minutes before you make this meal…

  • Preheat the oven to make the chicken & roast the cauliflower
  • Make the couscous

You can divvy up the ingredients into containers to heat + eat all week long, or you can serve your family family style. I like to let my kids choose which components of the meal they want.

Ingredients

  • Baked Greek Yogurt Chicken
  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup whole wheat couscous
  • 3 cups arugula
  • 1/2 cup thinly sliced red onion

Additional olive oil for drizzling on top

Instructions

  1. Prepare the Baked Greek Yogurt Chicken according to instructions here.
  2. To prepare the roasted cauliflower: Preheat the oven to 350F. Add the cauliflower to a large baking sheet and drizzle with olive oil. Sprinkle with dried oregano, garlic powder, salt and pepper. Bake until soft to fork and browned, about 30 minutes.
  3. Prepare the couscous according to package instructions.
  4. To assemble the bowls divide the couscous and roasted cauliflower amongst four bowls. Add a handful of arugula to each along with sliced red onion. Top with chicken and drizzle with olive oil. Enjoy warm.
