Greek Couscous Bowls

Greek Couscous Bowls are a delicious and balanced dinner made with a base of fluffy couscous, a handful of spicy arugula, perfectly roasted cauliflower, and my juicy Greek yogurt-marinaded baked chicken. With multiple components that can be made in advance, you’ll want to add this to your dinner rotation, stat!

Ingredients

  • Baked Greek Yogurt Chicken
  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup whole wheat couscous
  • 3 cups arugula
  • 1/2 cup thinly sliced red onion

Additional olive oil for drizzling on top

Instructions

  1. Prepare the Baked Greek Yogurt Chicken according to instructions here.
  2. To prepare the roasted cauliflower: Preheat the oven to 350F. Add the cauliflower to a large baking sheet and drizzle with olive oil. Sprinkle with dried oregano, garlic powder, salt and pepper. Bake until soft to fork and browned, about 30 minutes.
  3. Prepare the couscous according to package instructions.
  4. To assemble the bowls divide the couscous and roasted cauliflower amongst four bowls. Add a handful of arugula to each along with sliced red onion. Top with chicken and drizzle with olive oil. Enjoy warm.
