Despite the scorching summer temperatures we’ve had in New York over the last couple of weeks, nothing is stopping me from getting creative in the kitchen… baking included!
I mean, what else are we supposed to do with a surplus of ZUCCHINI (my favorite summer veg)?!
Sure, we could make another batch of my new favorite zoodle salad, or a tall stack of pancakes for brunch, or even a creamy pasta dish, but I love baking, so summer temps don’t stop me from turning on the oven and doing my thang!
Plus, my mom happens to make the best darn zucchini bread EVER, so I figured it was time to share my own variation… upgraded with a chocolatey twist!
So, let’s chat about CHOCOLATE for a moment. If you’re anything like me, you eat it *nearly* every day. Eliminating food fears means giving yourself permission to eat the foods you crave, and for me, chocolate fits the bill most days!
But, chocolate is a really common food fear for many of my clients… and oftentimes for good reason. Many types of chocolate are “Made in a factory that handles [insert whatever the allergen may be].” I’m looking at you tree nuts, peanuts, soy, and dairy. As someone living with food allergies, I get how hard it can be to trust a food product that has the possibility for cross-contamination.
If you or someone in your family has an allergy, I highly suggest signing up for FARE alerts, which notify you of cross-contamination issues in food products. Unfortunately, I receive a recall every single day. That’s why having products that are made in dedicated factories is so important to the food allergy community.
Now you may be thinking: No one in my family has food allergies, I don’t have to worry about this.
But what if you’re entertaining? Or your kids have a playdate with a child who has a life-threatening allergy?

I made two versions for you – 1 gluten free and 1 not – so there’s something for everyone! I personally LOVE the gluten free version and prefer its hearty and crumbly texture (it’s made with 100% oat flour), BUT if you don’t have a gluten intolerance, try out the original version… it’s moist and delicious too!
Either way, the 1-bowl technique is similar. And each loaf contains a full zucchini!

Ingredients
- 2 eggs
- 1/2 cup sugar
- 1/2 cup vegetable oil or melted coconut oil
- 1 cup packed shredded zucchini, with excess water squeezed out
- 1 1/2 teaspoons pure vanilla extract
- 1 1/4 cup all-purpose flour*
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/8 teaspoon baking powder
- 1/2 cup Nestlé Simply Delicious Semi-Sweet or Dark Chocolate Morsels, divided
Instructions
- Preheat oven to 350°F. Coat a loaf pan with oil spray or parchment paper and set aside.
- In a large bowl, whisk eggs. Then mix in sugar, oil, zucchini, and vanilla extract.
- Add flour, cocoa powder, salt, baking soda, baking powder, and 1/4 cup chocolate morsels. Mix together until uniform consistency forms, but be careful not to overmix.
- Pour batter into your prepared loaf pan and add the additional 1/4 cup chocolate chips on top.
- Bake for 45-55 minutes, or until edges brown and slightly pull away from the sides of your pan, or an inserted toothpick comes out clean.
- Let loaf cool fully before slicing. Enjoy!
Notes
*Note: For gluten free version, use 1 1/4 cups gluten free oat flour. To make oat flour, grind certified gluten free rolled oats until flour-like consistency forms.
