Welcoming spring this year has taken on a whole new meaning… it means our little one will be in our arms before we know it! I finally got around to sharing my second trimester update last week, and I already hit another pregnancy milestone – I entered the 30-week mark yesterday (ahh!).

I’m springing into action in terms of picking out a crib and nursery furniture, but also thinking about make-ahead meals.

I’m a long-time fan of food prep on the weekends and I know once our babe arrives it will be even more important to have simple recipes with minimal hands-on time and few ingredients in my arsenal.

I especially love this spinach artichoke frittata combo because it tastes so fresh, even though it’s made with pantry and freezer staples. Yup, I used frozen spinach and canned artichokes! Between the two of these veggies, you’ll get over a full serving of veggies at breakfast – how amazing is that? After all, it can be hard to sneak in those veggies at breakfast!

So are canned and frozen produce just as nutritious as fresh?

Usually, the answer is YES! When buying “processed” vegetables (anything that comes in a package is considered “processed”), check the ingredient list. Look for ingredients you recognize.

  • For frozen veggies, there should only be 1 ingredient (the vegetable itself).
  • For canned veggies, get it packed in water (not oil). There may be added salt, which acts as a preservative (this is OK).

As far as the flavor combo, is there anything better than a spinach artichoke dip-inspired breakfast recipe?

How did I add so much cheesy flavor?

I used nutritional yeast!

Nutritional yeast is a deactivated yeast that provides a cheesy, umami flavoring to food. It’s very popular in vegan and plant-based cooking to mimic cheese, and while it’s not 100% perfect, it’s pretty darn close!

Instructions

  1. Preheat oven to 350°F.
  2. Coat a 9-inch pie dish with nonstick spray or oil. Set aside.
  3. In a large bowl, whisk eggs.
  4. Add spinach, artichoke hearts, scallions, nutritional yeast, salt and pepper. Mix together until combined.
  5. Bake frittata for 30-35 minutes at 350°F, until edges and top are brown and eggs are fully set. Serve warm with crusty bread (sourdough preferred). Enjoy!
