Baked oatmeal is one of my favorite breakfasts. When I carve out just 30 minutes on Sundays to prep one for the week, my week is instantly better. Oftentimes I’ll even throw ingredients in a bowl and hope it comes out delicious – without measuring anything (let’s just say that leads to mushy or dry baked oatmeal usually!).

Most mornings I’m solo parenting with my 2 kids, so to get myself fed and nourished for a busy day of working and parenting, I need to make my breakfast in advance.

Blueberries and lemon is a common flavor combo, but blackberries and lemon is so underrated! And under-utilized! Trust me on this one!

Ingredients to Make Blackberry Lemon Baked Oatmeal 

You’ll need just 8 ingredients to make this baked oatmeal recipe, including: 

  1. Rolled oats are the bulk of this recipe. I love adding oats to breakfast because they’re full of fiber, and protein too since they’re a whole grain. I bulk order these organic oats on Amazon.
  2. Chia seeds add more fiber and healthy fats to this baked oatmeal. I always add chia seeds to baked oatmeal to enhance the nutrition and keep you full longer. Sometimes I’ll order my chia seeds from Thrive Market too.
  3. Cinnamon adds a warm flavor to this recipe. I don’t make baked oatmeal without it!
  4. Milk or non-dairy milk alternative adds moisture to this recipe. You can use any milk variety that you want.
  5. Egg whites help keep the oats together. You don’t want a crumble. You want a baked oatmeal that becomes fluffy and cake-like. Egg whites help give you that fluffy consistency.
  6. Pure vanilla extract adds an additional layer of flavor too, without added sugar.
  7. Blackberries are necessary for blackberry lemon baked oatmeal! You can use fresh or frozen blackberries in this recipe (you don’t even have to thaw them).
  8. Lemon zest contributes the lemon flavor here. This recipe does NOT use lemon juice because it would make the baked oatmeal too tart. Lemon zest adds just enough lemon oomph in a subtle, but present way. If you want even more lemon flavor you could swap in lemon extract instead of vanilla extract.

There’s no sweetener in this recipe?

NOPE! As you can see from the list above, there is no added sugar in this recipe. The baked blackberries ooze sweetness instead. If you prefer sweeter oatmeal you could add ¼ cup brown sugar.

Are oats bad for you???

In short… despite what social media tells you, oats are an excellent food to include regularly in your diet. If you’re worried about glyphosate, choose organic and be comforted to know that the EWG stated that levels are dropping in oat-based products. It’s nearly non-detectable in many products.

Since baked oatmeal is on my weekly rotation, I’ve come up with several trusty tips to bake the perfect oatmeal…

  • Make sure your ingredients are mixed well. While I love to see the videos on TikTok of making all the ingredients in the same dish you bake it in, it’s much better to mix all the ingredients in a bowl to make sure they’re well-combined.
  • Don’t over-bake it!!! Over-baking will lead to dried out crusty oatmeal – gross!
  • Under-bake if you’re heating it up throughout the week. This one is important!! If you’re going to be re-heating the baked oatmeal throughout the week, under-bake the oatmeal. This will ensure you don’t overcook it while reheating.

It’s quite simple to make this Blackberry Lemon Baked Oatmeal. You mix together all of the ingredients in a large bowl and then transfer to a baking dish. 

Bake away and in just 20 minutes you’ll have a delicious, fluffy, oatmeal-y breakfast that you’ll love!

Can you use frozen blackberries for this recipe?

YES! I actually used frozen blackberries when I originally developed this recipe. Frozen or fresh blackberries work in this recipe!

Can you add protein powder to this recipe?

Absolutely. Just watch the consistency to make sure it doesn’t get too thick. You may want to increase the milk if it gets too thick from your protein powder. 

Is this a balanced meal?

It can be a balanced meal on its own, however, you may wish to add some extra protein with it, like Greek yogurt or scrambled eggs.

Ingredients

  • 2 cups old-fashioned rolled oats (gluten free, if needed)
  • 1/4 cup chia seeds
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 ½ cups milk or non-dairy milk alternative
  • 2 egg whites
  • 1 teaspoon pure vanilla extract
  • 1 cup blackberries, fresh or frozen
  • Zest from 1 lemon
  • Optional, but recommended for serving: vanilla Greek yogurt

Instructions

  1. Preheat the oven to 350°F. Spray an 8 x 8 pan with cooking spray and set aside.
  2. In a large bowl, mix together the rolled oats, chia seeds, cinnamon and salt with milk, egg whites and vanilla extract. Fold in the blackberries and lemon zest.
  3. Pour the batter into the prepared baking pan. Bake for 20 minutes, until the edges are golden brown. Let cool before slicing. Serve with vanilla Greek yogurt. Enjoy!
