A bright burst of lemon pairs with sweet blackberries in this Blackberry Lemon Baked Oatmeal that’s a refreshing, yet cozy, morning meal, packed with filling fiber thanks to oats and chia seeds. Naturally gluten free and sugar free, this is a great morning meal you can make ahead and enjoy all week. Pair with Greek yogurt for a completely balanced meal!

Ingredients

  • 2 cups old-fashioned rolled oats (gluten free, if needed)
  • 1/4 cup chia seeds
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 ½ cups milk or non-dairy milk alternative
  • 2 egg whites
  • 1 teaspoon pure vanilla extract
  • 1 cup blackberries, fresh or frozen
  • Zest from 1 lemon
  • Optional, but recommended for serving: vanilla Greek yogurt

Instructions

  1. Preheat the oven to 350°F. Spray an 8 x 8 pan with cooking spray and set aside.
  2. In a large bowl, mix together the rolled oats, chia seeds, cinnamon and salt with milk, egg whites and vanilla extract. Fold in the blackberries and lemon zest.
  3. Pour the batter into the prepared baking pan. Bake for 20 minutes, until the edges are golden brown. Let cool before slicing. Serve with vanilla Greek yogurt. Enjoy!
