For the fish:
1 lb flake white fish, like flounder
1 ½ teaspoons smoked paprika
1 teaspoon garlic powder
¾ teaspoon brown sugar
½ teaspoon cumin
½ teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
For the salsa:
¾ cup chopped red bell pepper
2 nectarines, chopped
¼ cup chopped scallions
2 tablespoons chopped cilantro
1 avocado
Juice from ½ lime
For serving:
Corn or flour tortillas
Cilantro for garnish
Instructions
Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
Season the fish. Pat the fish dry with paper towels. In a small bowl, stir together the smoked paprika, garlic powder, brown sugar, cumin, oregano, salt, and black pepper. Sprinkle the seasoning evenly over both sides of the fish.
Bake the fish for 10–15 minutes, or until it flakes easily with a fork. (Cooking time will vary depending on the thickness of the fish.)
Make the nectarine salsa. While the fish bakes, combine the chopped red bell pepper, nectarines, scallions, cilantro, avocado, and lime juice in a medium bowl. Gently toss to combine. Taste and season with a pinch of salt, if desired.
Warm the tortillas. Heat the corn or flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in foil and warm them in the oven for a few minutes.
Assemble the tacos. Flake the cooked fish into large pieces and divide among the warm tortillas. Top generously with the nectarine salsa.
