If you love zucchini bread, you’re going to be obsessed with these overnight oats! My mom’s zucchini bread is a summer staple (will share the recipe soon!), so I knew I had to transform the cozy, spiced flavor of the beloved quick bread into a wholesome, make-ahead breakfast that fuels your morning.
With the added benefits of fiber from zucchini, healthy fats from chia seeds, and the staying power of protein powder, this is an ideal way to sneak in veggies before noon—no oven or stove required.
Zucchini Bread Overnight Oats are…
- Easy to make in advance
- A balanced breakfast
- Fun to take on the go
- Delicious!
- Nutritious!
Ingredients Used to Make Zucchini Bread Overnight Oats
- Rolled oats are the hearty base that gives overnight oats their classic chewy texture and whole grain goodness. Plus, just 1/3 cup packs in 3 grams of fiber, including a type of fiber called beta-glucan, which helps improve blood sugar response. Even more, oats contain 4 grams of protein in 1/3 cup, helping you meet your overall breakfast goal of 20-30 grams of protein.
- Chia seeds are tiny black seeds help thicken the mixture while adding fiber and omega-3 fatty acids. Chia seeds can absorb 9 times their weight in liquid!
- Ground cinnamon is essential in any zucchini bread recipe and brings warm, cozy flavor.
- Vanilla protein powder adds sweetness and a creamy vanilla flavor while making the oats more filling. Choose any protein you like, but I particularly love Orgain’s plant-based protein powders lately.
- Golden raisins are naturally sweet and chewy, they mimic the mix-ins often found in zucchini bread. My mom always used golden raisins in her zucchini bread, but of course you can use regular raisins too!
- Zucchini in overnight oats is a sneaky way to add veggies and moisture without affecting the taste. I prefer to use finely shredded zucchini because it effortlessly mixes into the oats.
- Any milk you enjoy softens the oats and bring all the ingredients together into a creamy consistency. When choosing a milk keep in mind that dairy, soy, and pea milk also add protein to this breakfast. Almond and oat milks do not contribute much protein.
Kitchen Tools Needed to Make Zucchini Bread Overnight Oats

- Mason jar or airtight container with a lid
How to Make Zucchini Bread Overnight Oats
You can prep this delicious, balanced breakfast in just a few minutes…
First, grate your zucchini and measure out ¼ cup, squeezing lightly if it’s overly watery. Unlike baked goods, it’s OK if some of the moisture from the zucchini stays in because we want the liquid to soften the oats. Plus, the chia seeds will absorb some of the liquid.
Next, add all ingredients—oats, chia seeds, cinnamon, protein powder, golden raisins, zucchini, and milk—to a jar or container with a lid.
Now here’s the important part… stir well to make sure everything is fully combined and the protein powder dissolves. The protein powder and chia seeds can clump together, so really get in there and scrape the sides and bottom of the jar.
Cover the container and refrigerate for at least 1 hour, ideally overnight.
In the morning, stir the oats and add a splash of extra milk if you prefer a thinner consistency. Enjoy cold or warm!

FAQs About This Recipe
Can I use instant oats instead of rolled oats?
Not really! Instant oats are essentially rolled oats pulsed into smaller pieces so they cook fast, but the texture will be much softer and more porridge-like. Rolled oats provide a heartier consistency.
What kind of protein powder works best?
Vanilla plant-based or whey protein powders both work well. Choose one that blends smoothly and has a flavor you enjoy.
Do I need to peel the zucchini first?
Nope! Just wash and grate—no peeling necessary. The skin adds extra nutrients and blends right in.
Can I make it without protein powder?
Yes! Just skip the powder and reduce the milk slightly (about ¾ cup instead of 1 cup). Add a little maple syrup or mashed banana for sweetness if desired.
How long do these oats last in the fridge?
They’ll stay fresh for up to 3 days in an airtight container, making them perfect for meal prep.
