Summer Zoodle Salad With Avocado Miso Dressing

Summer officially arrived last week… woo hoo!

Usually hot summer temps have me craving ALL THE VEG, but a few weeks ago, ALL I honestly wanted was ALL THE CARBS.

So you know what I did… I ate all the carbs, and didn’t think twice about it.

And guess what… on Sunday I was craving all the veg! It’s magical what can happen when you listen to your body.

That’s one of the biggest myths about eating according to your intuition– that you’ll just be eating donuts and pizza 24/7. This couldn’t be further from the truth.

However, when you take those foods off of their pedestal, you’ll enjoy ALL foods with a balanced approach to food!

So when I was back to craving ALL THE VEG, it was just in time for my monthly produce box from Cal Organic Farms!

I couldn’t wait to create something delish with this month’s in-season contents:

  • Dill
  • Watercress
  • Swiss chard
  • Purple carrots
  • Red onions
  • CORN (obviously I was most excited for sweet summer corn!!)

I had a few zucchinis in my fridge, so I added them to the mix and created this Raw Summer Zoodle Salad…

And let’s just talk about the dressing… it deserves a post on its own because O-M-G! It makes (miso) happy thanks to blended avocado, miso, apple cider vinegar, lemon juice, and nutritional yeast.

Plus, gut friendly! Woo hoo! Fermented miso is great for your gut health.

Sure, you can turn this into a pasta salad of sorts with whole grain penne or even one of the lentil or chickpea-based pastas out there, but I love the refreshing taste of zoodles!

With a little spiralizing and dicing, this easy side dish comes together in minutes! Or you can throw a piece of protein on top for a complete meal. I’m thinking my rubbed salmon would be perfect!

Summer Zoodle Salad With Avocado Miso Dressing

  • Prep Time: 20 minutes
  • Total Time: 20 minutes

Ingredients

For the salad:

  • 1 cup fresh corn, cut off cob (alternatively can use frozen and thawed corn in the off season)
  • 6 cups zoodles (I used 1 extra large zucchini)
  • 1/2 cup chopped red bell pepper
  • 1/2 cup thinly sliced red onion
  • 1/3 cup chopped dill
  • 1/4 cup chopped cilantro (may omit or use parsley)
  • 1 avocado, chopped

For the dressing:

Instructions

  1. Add all dressing ingredients to a blender and blend until smooth. I used my Vitamix. Start with just 1/4 cup of water, adding the additional tablespoons, as needed, to achieve desired consistency. Taste and adjust seasoning, to taste.
  2. Add all salad ingredients to a large bowl.
  3. Pour half of the dressing on top and mix until all vegetables are evenly coated.
  4. Add additional dressing, as needed, and toss together. Enjoy! ?

Notes

You may make the dressing and prepare the salad in advance of serving, however, avoid dressing salad more than 1 hour prior to serving.
