What I Ate Wednesday 48
Hiiiyyyaaa guys!
I have to say getting this What I Ate Wednesday out this week was a little rough. BUT, so is life. My day started with spilling half of S’s overnight oats on the floor because you shouldn’t shake an open jar…FYI!
So after a 15 minute clean up sesh, I was finally able to get my day started! Whew!
So I went through my entire usual Tuesday morning routine…
A tall glass of cold water, VSL#3 probiotics, my coffee and a pre-workout snack…
Half of a sweet potato, cut into coins, microwaved and then browned in a skillet and topped with sunflower seed butter and 88 acres pumpkin seed butter.
I went to my dance cardio class about an hour and a half later, shweated my booty off, drank my 0.75L water bottle during class and then finished another one of these babies within an hour of getting home…
After I showered and got ready for ‘work’ (I work at home during the day so that means yoga pants), I made a humungo salad with nearly every veg in my fridge…
But my eyes were DEFINITELY bigger than my stomach because I could only eat a quarter of it, so I saved the rest for lata!
After working for a few hours and finishing my salad, I had a ramekin of the crunchiest ever green grapes. SO GOOD.
Grapes are such an underrated fruit…thoughts?
I worked through the afternoon cranking out a bunch of blog work and getting ready for my clients in the evening, but before heading out to see my clients I had another snack… homemade hot cocoa with marine collagen ((Sounds kinda gross, right? It was delish!)) and half of a granola bar I’m sharing with you guys on Monday. I couldn’t taste the protein at all and it was such a filling snack! Unfortunately I slurped it right up before I remembered to snap a pic!

After seeing a few clients in the evening I finally got home to S around 8:30pm and had dinner. Luckily I prepped most of it before I left the house so we had a quick cauli “fried” rice and quinoa with a bunch of veggies we had laying around.
Tip! To bulk up S’s veggie meals I double the grain and added an egg!
I quenched my chocolate sweet tooth with a handful of One Degree Organic’s Brown Rice Cacao Crisps and a few Enjoy Life dark chocolate chips sprinkled in. Perfect!
The we prepped overnight oats for the mornin’, we caught up on This Is Us and we went to bed pretty soon after.
I finished up this post in bed and off to zzzzz’s I went…
