What I Ate Wednesday 43
Oh hello friends!
Tis the busiest season of the year, so I’m not even going to fluff this one up — life is buuusssyyyy — so I’m jumping STRAIGHT into the eats (from Monday) for this week’s What I Ate Wednesday…

I woke up a teensy bit later than I had anticipated on Monday ((call it my Thanksgiving weekend hangover)) and was SO tired all day! I tried to wake myself up with an ice cold glass of water first thing ((didn’t work!)), so I got my greens in with my favorite green smoothie (pictured above), probiotics and COFFEE.
I’m often asked which probiotics I use ((and I feel like I’ve tried them all!!)) and VSL3 REALLY helps my belly and is the only one I recommend to clients [affiliate link below].
I did some work and got my food prep on for the week ((the downfalls of working at home — procrastination!!)), caught up on emails, and put my finishing touches on Friday’s gift guide! Then pre-workout I nabbed a few pieces of roasted butternut squash hot from the oven that were part of my food prep.
I am definitely not yet bored of winter squash! I make my roasted butternut almost weekly!

After completing level 5 of Metamorphosis by Tracy Anderson I chugged a couple glasses of water, showered and set out to make lunch. Oh and sipped some booch while I was slicing my veggies…
Around 1ish I made two slices of sweet potato toast for lunch… one topped with tuna avocado salad and the other with mashed avo and a hard boiled egg white with tons of veggies on the side. Veggies don’t only fill you up, but they’re super hydrating too!
I was full from this plate (which took an entire hour to eat in between work!), so I never ate the clem…but saved it for later!
I continued to do some work throughout the afternoon and then had to get ready for class around 4:15 ((boring day, kinda!!)). I ate another slice of tater toast with homemade sunflower seed butter ((which tasted WAY better than it looks, BTW!)), and then packed alllll the snacks.
I think I get nervous in case I all of a sudden start having a hangry day ((like that would happen all of a sudden at 5pm?!)), so I packed this edamame and dark chocolate — as shown below — and a baggie full of sliced veggies. I didn’t actually eat the edamame and chocolate in class, but did snack on the veggies and drank my entire water bottle.
Unfortunately, the no cell phone rule got in my way so I never snapped a pic, but you can imagine — baby carrots, sliced bell pepper and some cukes!
I got home from class around 8ish and made a quick veggie-filled dinner using my food prep staples…
Zoodles with sliced bell pepper, spinach, tomatoes and Rao’s marinara sauce with nutritional yeast sprinkled on top with some of my crispy edamame that I never ate earlier. And a side of roasted carrots and some homemade hummus I had made earlier in the day.
Side note: I made S these cute individual turkey meatloaf cups I’ll be sharing in a couple of weeks ((he loved them!)), so he had that with some veggies too.
S and I booked a trip to ISRAEL for March and I am BEYOND EXCITED (((doing alllll the happpppy dances!!))). So we celebrated over some dark chocolate and that clementine that I never ate at lunch! He also ate a few of these Bitsy’s Brainfood Ginger Zucchini cookies that he’s obsessed with!
And we called it a night after watching the last 30 minutes of The Holiday ((my fave!!!))….sigh!
