What I Ate Wednesday 41
We made it to the halfway point of the week — happy HUMP day ya’ll!! Aside from staying up WAY too late last night watching the election results roll in (I KNOW I’m not alone!), this week has been SO productive, and it feels SO GOOD!
After being away with friends all weekend ((and maybe drinking a littttttle too much wine)), I was so very glad to cross SO many things off my to do list that have been hanging over my head lately!
And another great feeling — I’m on target to meet one of my November goals I mentioned in my November newsletter (don’t forget to SIGN UP so you don’t miss a future newsletter!!) — exercising 5 days a week! How are you doing on any goals you set for the month???
Alright…enough chitty chat…let’s get to the EATS! These are from last Thursday…

My day started with a bang: A deeeelicious plate of sweet tater toast (above) that you guys went CRAZY over on Instagram! I shared my toaster recipe with ya’ll a couple of months back, but I think I like the stovetop version (recipe on Instagram) even more! I loaded ’em up with sunflower seed butter and alllll the toppings: naner slices, pepitas, blackberry jam, toasted coconut, chia seeds, and even a few dark chocolate chips! 🙂 And obviously with a side of a couple cups of coffee.
Thursdays tend to be my get sh*t done days…and today was no different! My butt practically didn’t leave my desk or kitchen table (where I prefer to get work done at home) all morning…until I finally made time to workout and make a few recipes (that you’ll see below).
I did my Tracy Anderson workout — strength training + dance cardio — and then chowed down on lunch…
…a couple of scrambled eggs and salad. With some melon on the side…

I did a little bit more work (in incredibly poor lighting!) while I sipped on a winter favorite…chai tea with a splash of soy milk and a dash of cinnamon! Mmmmmm 🙂
Then I hit the kitchen to whip up a couple of recipes and shoot a couple of videos! First up, the white bean hummus I shared yesterday… ((Have you viewed my video yet?!))
Then I made these oh so gingery Gingerbread Cookie Energy Bites that I am ooooobsessed with…the recipe is most definitely coming soon! Oh and while we’re at it, another gingerbread-inspired cookie recipe (like real cookie!) is coming soon too, so I’m telling you now, order this crystallized ginger [affiliate link] pronto because it’s PERFECT in gingerbread cookie ANYTHING, and well, TIS THE SEASON! WEEEEE!
So I obviously had to taste test along the way to make sure everything came out A OK! 😉
After creating in the kitchen, shooting videos, photographing, editing, etc (YES, it takes a lot out of ya!), I had dinner with a friend from middle school at Todd English’s Food Hall at the Plaza Hotel ((sounds so faaaannccy)). I absolutely love catching up with my besties from way back when…no one knows ya better!
Along with a glass of Pinot, I ate my Greek salad, but skipped the sweet potato fries and feta pies on the side of my plate because I knew going away for the weekend was going to lead to some unhealthier food choices, and well, I wasn’t craving them, so I listened to mah body! All about balance + conscious indulgences!
But while watching TV with S at home after, my sweet tooth was calling so I had a few of these gingerbread cookies “made with zucchini & carrots… ((have you tried Bitsy’s Brainfood yet?!))
Just a few of these satisfy my sweet tooth (and they’re nut free too!)….plus they have veggies?!
And that was my day! Hope yours was just as delicious! 🙂

Congrats on doing so well with your exercise goal! After a bit of a break, my husband and I are back on track with our workouts- it feels so good! I was definitely one of the people going crazy over your Sweet Tater Toast and now I’m going crazy over those Gingerbread Cookie Energy Bites- YUM!
