What I Ate Wednesday 40
Guys…first of all, Happy November!! How and when on earth did it become NOVEMBER?!

Second…I cannot believe this is my 40th (yes 40th!!) What I Ate Wednesday post! And I cannot believe how much great feedback I get from you guys about these posts…so I love sharing them! 🙂
These eats are from last Monday….
I woke up around 6:30am because lately I just can’t sleep much…I know I’m lucky because I absolutely LOVE what I’m doing and get so excited to get to work each day! I took my probiotics, sipped a cup o’ Joe and ate half of a banana within 30 minutes of waking up (but was in too much of a daze to snap a pic).
I did my Tracy Anderson mat [<– these are the actual DVDs I use!] workout at home and was DRIPPING. Click here to see a taste of what I do (and for a kiiiilllller arm workout!). Whoever says strength training isn’t hard doesn’t know what they’re doing — SO HARD, including aspects of balance, strength and determination!

I was showered and ready to start my day by 8:45…and that included a sweet potato with sunflower seed butter, a few raisins, chia seeds and pom seeds (pictured above)! YES it’s pomegranate season and YES I already stained a white tank top de-seeding the arils the other night (I shared my tips on my Insta story…are we connected yet?!). I ate the other half of the tater too, but I totally didn’t snap a pic before I ate it. Whoooops!
I was having some cabin fever after a very loungy weekend around the apartment and got out of the house this morning to get some work done. A new Starbucks opened a few blocks from my apartment and I’m loving that they’re encouraging customers who are staying in the store to use a reusable cup!

I decided to indulge thyself during my self-imposed lunch hour and get that much needed mani/pedi…what do you think of this new color?!
Then I rushed to meet a client by 1pm and was totally starving and did not do what I say and eat a sufficient snack. You know when you’re not hungry for a snack and then all of a sudden that hunger hits you and you just can’t eat yet because work gets in the way and you feel yourself getting haaaangryyyy?? YUP, it happens to all of us!
So after my client meeting I had a bunch of veggies, avo (that was clearly on its way out!), leftover tuna (<– the only tuna I like to eat!) from yesterday’s lunch and homemade tahini-free hummus (recipe coming soon..proooomise!) with some Happy Herbert’s oat bran pretzels too (love these!).

I got some more work done and sipped some hot cocoa because YES, FALL IS HERE!!!! #finally!
I have late class on Mondays (vitamins and minerals, WAY intense) so I always pack tons of snacks (and usually don’t eat most of them, but better prepared than sorry…I already learned my lesson earlier in the day!).
I sipped my green tea and ate the dried edamame, pumpkin seeds and grapes, but left over the pretzels. And took the shadiest pic because my professor is VERY strict about cell phone use!
I got home a little after 8 (OK, not that late!) and made a great big salad with tons of leftovers…
I think I food prep JUST for Monday night dinners! I had roasted brussels, cauliflower and carrots (all of which I love to dip into Dijon) and leftover bean balls over salad with more pom seeds, a sprinkle of goat cheese and some sliced pear for dessert!
And then while watching Dancing With The Stars (YUP, guilty pleasure!), I snacked on a few slices of dried mango (LOVE Peeled snacks because there is NO added sugar — and nope, not paid to say that!).
And that’s a wrap! I’ve noticed that I stopped showing all the H2O I drink, but let me assure you, my water bottle never leaves my side and it’s SO important to stay hydrated throughout the day…even as temperatures drop!

I could definitely try! A lot of dried fruit is easiest with a dehydrator (don’t have one of those!) and VERY time consuming in the oven on a lowww temp!
