What I Ate Wednesday 36
The past week and a half since we’ve been back from Portugal has felt like such mumbo jumbo. I was in this weird transition period between my internship and grad school classes starting again (last semester!!), but needed to be studying for my RD exam (which didn’t really happen yet), and combating jet lag and family responsibilities….things got a littttttle all over the place!
So I resolved to wake up every morning this week with intention. I’m starting a new chapter in mah life with my internship over, so the next few months are bringing LOTS of changes…but with changes comes a lot of hard work! So what have I been eating to stay fueled, energized, and focused to study for my exam, conquer grad school, AND werk werk werk werk werk?!
Working/studying from home has its perks because I no longer have to scarf down breakfast on my way out the door. Instead, I whipped up a couple of scrambled eggs and stuffed ’em (or at least tried!) into a high fiber tortilla <– click here to see my favorite one (pictured above). And that’s True Made Foods ketchup on the side (it has veggies in it!!!).
Lunch was a humungo salad (I think I ate 3 bowls throughout the afternoon)…
Spinach, cucumber, tomatoes, beets, roasted red peppers, quinoa, some avocado, a drop of feta, and a few pumpkin seeds and crumbled whole wheat pita chips on top for CRUNCH! I used the leftover dressing from this salad I shared on Monday to dress it and oh em geeeee…my new go-to!

For a late afternoon snack I had a few whole grain crackers with sunflower seed butter and bloobs. And another cup of coffee. The kind folks over at OXO sent me this new Oxo On Coffee Maker and S and I are obsessed with it…we swear the same coffee we’ve been making now tastes even better (how is that possible?!).
Dinner was a tofu stir fry, prettty similar to this baby, but I added seared tofu for more oomph. My baked tofu stir fry is coming a blog near you soon 😉
We’ve been eating dinner pretty late so I haven’t found the need for an extra snack most nights, but I’ve been seriously crushing on mango lately…
And that’s what we call a pretty basic day ’round here!
