The second the calendar reads February, my mind immediately goes to all things hearts, pink, chocolate, and love-related. It’s not only Valentine’s Day (subtle reminder – just 4 days away!), but it’s also my wedding anniversary!
Since chocolate is on my mind, I thought it would be the perfect time to share my new favorite brownie recipe – Vegan Black Bean Brownies!
They’re 100% food allergy friendly, made in a blender (yes, SO simple!), and whipped up with a few special ingredients. But I know what you’re thinking… BEANS??? … IN DESSERT?!
Before you X out of this window, bear with me for a second… What if I told you that you cannot even taste the beans at all. ZERO BEAN FLAVOR. I promise!
I didn’t tell my taste testers they were made with beans and they had NO IDEA! These Vegan Black Bean Brownies are fudgy and cakey, chocolatey, dense, thick, and DELICIOUS. Notice I didn’t mention anything about a beany taste!
When you rinse canned beans really well (to eliminate any bean flavor), then blend ‘em up, you get a grain free and gluten free flour of sorts – the perfect base for these Vegan Black Bean Brownies.

Plus, by using beans instead of regular flour, you’re adding tons of fiber and plant-based protein to a dessert… without sacrificing flavor. Now that’s a nutritiously delicious win-win!
But how do you get a fudgy, yet cakey, consistency?
It’s all in the creamy SunButter, some oil, and a hint of liquid sweetener.
The healthy fats in SunButter are a healthier replacement for most of the oil and eggs usually found in brownies. Yes, these still have some oil, but not nearly as much as traditional brownies. Plus, you get some extra vitamins and minerals by using SunButter over oil too.

Vegan Black Bean Brownies
Ingredients
- 2 flax eggs (2 tablespoons ground flaxseed + 1/4 cup + 2 tablespoons water)
- 1 15 oz can black beans, drained and rinsed very well
- 1/4 cup pure maple syrup
- 1/4 cup + 2 tablespoons creamy SunButter
- 1/4 cup coconut oil or vegetable oil
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 cup chocolate chips, plus additional for sprinkling on top
Instructions
- Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper or spray with oil (I use my Misto).
- Make flax “eggs” by combining 2 tablespoons ground flaxseed with water. Stir and let sit for a few minutes.
- After a few minutes, add all ingredients to your Vitamix or high-powered blender, except for 1/4 cup chocolate chips. Blend on medium-high speed until all ingredients are combined. You may need to pause to scrape down the sides.
- Pour brownie batter into your prepared baking dish and sprinkle with the remaining 1/4 cup of chocolate chips. Bake for 40 minutes, or until inserted toothpick comes out clean.
- Let cool completely before cutting and serving. Enjoy! 🙂
