This Tropical Avocado Chicken Salad Sandwich makes the most delicious lunch with creamy chicken salad smothered in avocado and dotted with fresh mango, stuffed inside a whole wheat pita!

Ingredients

Scale

1 medium avocado

2 cups shredded or chopped cooked chicken

3 hard boiled egg whites, chopped

1/2 cup chopped bell pepper

1/4 cup chopped red onion

1/2 cup chopped mango

Generous pinch salt and pepper

For serving: 4 whole wheat pitas (or gluten free bread as alternative)

Instructions

  1. Mash avocado in a bowl.
  2. Add chicken, hard boiled egg whites, bell pepper, onion, and mango. Gently toss together until all ingredients are evenly distributed amongst avocado. Season with salt and pepper.
  3. Stuff avocado chicken salad in whole wheat pita (or bell pepper half). Enjoy!
