It’s that time of year again to look back, reflect, and see what this past year was all about! While some magazines are deeming 2014 “the year of the booty,” I’m looking more into FOOD!
We saw exponential growth in gluten free foods, the broth trend (NYC – have you visited Brodo yet?), and fermented foods (kimchi, anyone?)…what do you think 2015 will have in store?
Before we jump into next year’s food trends, let’s take a look back at 2014! C it Nutritionally turned 1 and I am ever grateful for all of your support, encouragement, and dedication. When I first started blogging, I knew I needed my own voice out there in the ever-evolving realm of food and nutrition, but I wasn’t exactly sure about how. All I knew is that I wanted to help you “C” [see], whatever your “it” may be, a bit more nutritionally! While it’s still evolving, C it Nutritionally has really come into its own lately and I couldn’t be prouder! Expect a BRAND NEW look come 2015…I’m SO excited!!!
Now, with no further ado, let’s look at YOUR *5* favorite C it Nutritionally recipes from 2014:
5. Mung Bean, Quinoa, and Lentil Salad-Stuffed Avocado
This was the FIRST (and only…for now) lentil recipe I have featured on the blog, despite my LOVE of lentils (they’re a food prep staple!). South of the border flavors make this lunch hit a winner, with leftovers for days! Even though it has a summery feel, it’s perfect for winter months as well!
Maybe it’s the chilly weather or the comfort aspect, but this classic veggie soup I re-published two weeks ago became an instant favorite!
3. Allergy Friendly Green Monster Smoothie
For all of my food allergy friends out there, I re-created a classic green smoothie FREE from all top 8 allergens! Simple swaps here and there make this recipe customizable to YOU! Stay tuned in 2015 for more top allergen-free recipes!
This recipe was an absolute favorite by family and friends and all of YOU! Spry Living featured this recipe on their “15 Lightened Up Summer Desserts” because it’s all the taste of good ol’ peach pie with MUCH less fat, calories, and sugar! I can’t wait for peach season again to make this recipe!
These bean burgers are one of the MOST pinned recipes from C it Nutritionally, deserving the top spot on this list! A perfect Meatless Monday meal year-round, you can whip up these burgers in just minutes flat! If you haven’t tried this recipe yet, I urge you to do so ASAP…they fit in PERFECTLY with any New Years resolution!
