How perfect is this scene: my oven is on, it smells like I lit a cookie candle, and then it starts SNOWING!
SNOW…in November… the week before Thanksgiving…when I first made these cookies.
And I don’t know what’s made for homemade cookies more than snow. (OK, maybe a glass of milk). I literally couldn’t write a better scene if I tried! (OK, OK, a Hallmark movie was on in the background as I write this!)
December is cookie season, so I would be remiss not to share a new recipe that you MUST make this year! While you could head to a bakery and pick up a dozen, it’s not so simple when you have food allergies.
These 5-Ingredient Coconut Flour SunButter Cookies are nut free, peanut free, and gluten free, and made just a litttttle bit healthier, thanks to the simple ingredients used.
There is 1 exception – as the title suggests, this recipe does contain coconut. According to the FDA, coconut is a tree nut, but many people with tree nut allergies are not allergic to coconut. You know your allergies. Check with your allergist, and if you’re unsure, get tested.

Coconut flour is made from coconuts. It’s a high fiber and high fat flour, that’s gluten free and grain free. Fiber helps us stay full longer, promotes good digestive health, heart health, and even prevents diabetes, so we want to maximize our fiber intake throughout the day.
The quarter cup of coconut flour in this recipe contains a whopping 10 grams of fiber! An equal amount of all-purpose flour (usually used for baking) contains less than 1 gram of fiber!
Plus, Natural SunButter is used instead of butter for this recipe. Compared to butter, SunButter has MORE vitamins, minerals, and healthy fats. Hence the “Healthy” Coocnut Flour SunButter Cookies.

Ingredients
- 1 cup Natural SunButter
- 2 large eggs
- 1/3 cup coconut sugar or brown sugar
- 1/4 cup coconut flour
- Pinch of salt
Instructions
- Preheat oven to 350°F.
- In a large bowl, using a sturdy spoon, mix together all ingredients (Natural SunButter, eggs, sugar, coconut flour, and salt). The batter will be tough to combine at first, but mix until uniform consistency forms.
- Roll about 2 tablespoons of dough into a ball and place on a lined cookie sheet (with parchment paper or a silicone baking mat) spaced a few inches apart. Using a moist fork (dip the fork in water), create crisscross marks. For ease, wet the fork in between marking each cookie.
- Bake for 10 minutes, until edges just start to turn golden. Let cool for at least 10 minutes on the cookie sheet before switching to a cooling rack. Enjoy! 🙂
