I scream… you scream… we all scream for Chocolate Chip SunButter Banana Ice Cream!

It’s no secret that I’m a BIG fan of banana ice cream, and you’re going to LOVE my latest flavor. I think it may be my favorite thus far!

But before I dive into that, let’s talk about banana ice cream in general…

If you (like me) have food allergies and intolerances, ice cream season can be a big let down. I remember hearing that familiar jingle while we finished up dinner and running through our neighborhood, chasing the music to find the ice cream truck. Unfortunately, when the truck arrived, my options were limited to the plain water ices… if that! WOMP WOMP.

So, if you or someone you know has food allergies or intolerances, I feel you! There’s nothing more refreshing than an ice cream cone on a H-O-T summer day, but it’s most important to stay safe.

I wanted to create a treat that EVERYONE can enjoy and is easy to prepare so you can have as carefree of a summer as possible!

And that’s how this Chocolate Chip SunButter Banana Ice Cream was born!

The Best Way to Freeze Bananas

I don’t know about you, but I always have a stash of frozen banana slices (or chunks) in my freezer. Being the banana connoisseur that I am, I’ve learned a thing or two over the years about properly freezing bananas for the best banana ice cream.

When bananas are starting to go bad and you don’t feel like making banana bread, FREEZE ‘EM! This way, you’ll always have a stash too and can make banana ice cream at any time.

The easiest way to do this is to line a baking sheet with parchment paper and place ¼-inch thick banana slices on the sheet to freeze. Leave in the freezer for about 2 hours (or even better, overnight), then transfer to a freezer-safe storage container (I store frozen banana slices in stasher bags!).

This way, if you already have frozen bananas ready to go, you can make this recipe in less than 5 minutes, then let the finished product harden up in the freezer a bit.

How to Make Banana Ice Cream

The good news is that you’ll still be able to have plenty of fun in the sun because this recipe is SO EASY to make.

First, you freeze bananas (see above).

Then, you blend together all of your ingredients (except the chocolate chips).

Investing in a high-powered blender is probably one of the best kitchen tools you can invest in. We’ve had our Vitamix for about 5 years now and it’s still going strong. I use it at least 4 times a week to make smoothies, soups, energy bites, dressings and marinades, sauces, and much more.

Once the SunButter and bananas are blended together, mix in the chocolate chips with a spoon (I do it right in the blender). Then, you can transfer to a loaf pan to freeze.

You could eat the ice cream right away (and I do lick the spoon a few thousand times while transferring to the loaf pan), but it will be like a super thick smoothie. I like to freeze it for several hours so it can harden up and scoop like legit ice cream.

Chocolate Chip SunButter Banana Ice Cream

Ingredients

8 bananas, sliced into ½-inch coins

1/3 cup water or milk for blending

1/3 cup Natural SunButter

¼ teaspoon sea salt

½ cup dark chocolate chips

Instructions

  1. Line a baking sheet with parchment paper. Place sliced bananas on baking sheet and freeze for about 2 hours.
  2. Once bananas are frozen, add bananas, water or milk, Natural SunButter, and sea salt to a high-powered blender. Blend until smooth. You may need to pause to scrape down the sides before fully blended.
  3. Transfer SunButter Banana Ice Cream to a loaf pan or freezer-safe dish. Mix in chocolate chips.
  4. Cover ice cream and freeze for at least 4-8 hours, depending on your desired consistency. Serve in a cone (trust me!).
