Turkey Apple Stuffed Honeynut Squash

Turkey Apple Stuffed Honeynut Squash is a hearty winter meal packed with flavor, but also balanced to help you feel your best! Plus, it looks fancier than it is, so it’s great for a winter dinner party too!

  • 4 honeynut squashes, halved lengthwise with seeds scooped out
  • 1 ½ tablespoons olive oil, divided
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1/4 teaspoon black pepper, divided
  • 1 large shallot, finely chopped
  • 2 garlic cloves, chopped
  • 1 lb ground turkey
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon smoked paprika 
  • ½ cup chopped parsley
  • 1 small macintosh apple, chopped
  • 2 tablespoons salted pepitas (shelled pumpkin seeds)

Instructions

  1. Preheat the oven to 400°F. Place the honeynut squashes cut-side-up in a 9 x 13-inch baking dish.
  2. Drizzle 1 tablespoon of olive oil over the cut side of the honeynut squashes and season with cinnamon, ¼ teaspoon salt and ⅛ teaspoon black pepper. Roast cut-side down for 25 minutes, until the flesh of the squash is soft and tender.
  3. While the squashes roast, heat ½ tablespoon of olive oil in a saute pan over medium heat along with the shallots and garlic. Saute until softened. 
  4. When the shallots are soft add the ground turkey to the saute pan and season with dried thyme, oregano, smoked paprika, and ⅛ teaspoon black pepper. Once the turkey is cooked, turn off the heat and mix in the parsley and apples.
  5. When the squash is done, remove it from the oven and stuff the turkey and apple mixture in the squash. Switch the oven to broil and broil for 2-3 minutes. Sprinkle with pumpkin seeds before serving.
