Gluten Free, Grain Free, Soy Free, Nut Free
Whenever I find myself in a dinner rut, I take one of my favorite recipes to cook and add a little twist. Meatballs are a staple in our family. Everyone loves Italian night (my kids are 90% pasta, I swear!), but the same old same old can get boring sometimes!
While my husband isn’t a feta fan (who is he?!?), I knew I had to switch things up a bit… which is how I created these Spinach and Feta Turkey Meatballs!
These Spinach and Feta Turkey Meatballs are…
- Easy to make in one bowl
- Tender and juicy (no dry balls here!!!)
- So flavorful
- Tangy, thanks to the feta
- Versatile – serve over spaghetti squash, as pictured, or add pasta
When I say versatile, I mean it! I even threw the leftovers over salad the next day as part of my lunch!
Ingredients to Make Spinach and Feta Turkey Meatballs with Spaghetti Squash
The ingredients are fairly self-explanatory from the recipe title alone! You’ll only need a few more spices, plus an egg for binding and voila!
You’ll need:
- Spaghetti squash
- Ground turkey (or chicken or beef)
- Baby spinach
- Scallions
- Egg
- Dried oregano
- Granulated garlic
- Smoked paprika
- Feta
From the sounds of it, consider these Greek Turkey Meatballs – so good!
Can I use another type of meat?
Of course! Substitute out the turkey for ground chicken or beef. Oooh an idea just popped into my head that I’m going to test – salmon balls using canned salmon. I bet those would be delicious too!
How to Make Spinach and Feta Turkey Meatballs with Spaghetti Squash
Although you could entertain with this recipe (it’s that good!), this recipe is quite simple to make.
First, if you wish to serve with spaghetti squash you need to get your spaghetti squash roasting because that takes the longest.
Once your spaghetti squash is in the oven, get working on your balls.
In a large bowl, you’ll mix together the ground turkey with baby spinach, scallions, egg, oregano, garlic, smoked paprika, plus salt and pepper. Then you’ll fold in the feta until evenly combined.
Form into 12 balls and place on a baking sheet. I didn’t use any parchment paper this time, and they came out great (didn’t stick either!). You only need to bake for 10 minutes, so I like to wait until the spaghetti squash is almost done to pop them in the oven.
I like to use a meat thermometer to ensure the safe cooking temperature is reached. This is the one I use.
And that’s it!
How to Serve Spinach and Feta Turkey Meatballs
You could serve these Turkey Meatballs with a red sauce, but I was actually super satisfied with just a drizzle of olive oil, sprinkle of parsley, and some olive thrown in with my spaghetti squash.
Ooohh or maybe these would be delicious dipped in some hummus or tzatziki as an appetizer?! They’re that good, you could entertain with them!
If you don’t want to use spaghetti squash, you could also serve these with…
- Zoodles (zucchini noodles)
- Pasta
- Chickpea pasta (for even more protein)
- Whole wheat pasta (for more fiber!)
