These delectable S’mores Cookie Bars bring together the best parts of a classic campfire treat—graham crackers, chocolate, and marshmallows—in one chewy, oven-baked dessert. Made with a rich cookie dough base infused with graham cracker crumbs, melted chocolate bars, and gooey mini marshmallows, this easy recipe is perfect for summer gatherings or cozy nights in.

Ingredients

Scale
  • 1 cup (2 sticks) salted butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs, at room temperature
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1 1/4 cups graham cracker crumbs
  • 1 7.5oz jar marshmallow fluff or 2 1/2 cups mini marshmallows
  • 4 Hershey’s chocolate bars, or your favorite chocolate bars

Instructions

  1. Preheat the oven to 350F. Line an 9×13 baking dish with parchment paper and set aside.
  2. In a large bowl, using a handheld mixer, cream the butter with the white sugar, brown sugar, and vanilla extract until combined.
  3. Add the eggs, one at a time, mixing well in between.
  4. Add the baking soda, baking powder, salt and 1 cup of flour to the bowl. Using the handheld mixer on medium speed, mix the dry ingredients into the wet ingredients until just combined.
  5. Once incorporated, add the remaining flour and mix until just combined.
  6. Finally, mix in the graham cracker crumbs.
  7. Assemble the bars for baking. Press half of the cookie dough mixture into the bottom of the prepared baking dish. Add the marshmallow fluff or marshmallows on top, followed by the chocolate bars in an even layer. You may need to break the chocolate bars to cover the marshmallows. In a flat layer, add the remaining cookie dough on top, covering the chocolate and marshmallows. It doesn’t have to be perfect, remember cookie dough spreads when it bakes.
  8. Bake for 22-25 minutes until the top is golden brown. Remove from the oven and let cool for at least an hour before slicing. You can also chill the bars for a cleaner slice. Enjoy!
