Sheet Pan Chicken Sausage Fajitas

  • 1 yellow onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 1 tablespoon avocado oil
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 5 chicken sausage links (organic preferred), sliced
  • 4 (6-inch) corn tortillas
  • Optional toppings: avocado, salsa, cabbage slaw

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, toss together onion and pepper in oil and spices (chili powder, cumin, garlic powder, and smoked paprika).
  3. Transfer to a large parchment paper-lined baking sheet. Add chicken sausage. 
  4. Bake for 15 minutes. Switch oven to high broil and broil for 3 minutes.
  5. While chicken sausage and veggies cook, heat tortillas over open flame.
  6. To assemble fajitas, layer chicken sausage and veggies with desired toppings. Enjoy!
