yellow onion, thinly sliced

bell peppers, thinly sliced

avocado oil
¼ teaspoon
chili powder
¼ teaspoon
cumin
¼ teaspoon
garlic powder
¼ teaspoon
smoked paprika

chicken sausage links (organic preferred), sliced

(6-inch) corn tortillas
Optional toppings: avocado, salsa, cabbage slaw

Instructions
Preheat the oven to 375°F.
In a large bowl, toss together onion and pepper in oil and spices (chili powder, cumin, garlic powder, and smoked paprika).
Transfer to a large parchment paper-lined baking sheet. Add chicken sausage.
Bake for 15 minutes. Switch oven to high broil and broil for 3 minutes.
While chicken sausage and veggies cook, heat tortillas over open flame.
To assemble fajitas, layer chicken sausage and veggies with desired toppings. Enjoy!
