There’s a lot of hype about ultra-processed foods in the media right now, and I agree with most of the statements. HOWEVER, we cannot lump all ultra-processed foods into the same category. We need to look at the ingredient list, cooking methods (if any) that are used, and HOW the foods are processed.
This recipes features TWO (!!) ultra-processed foods:

- Packaged gnocchi
Why do I feel OK as a dietitian and mom to serve these ultra-processed foods to my family?
I have a lot of reasons, but they start with convenience and time. As a busy working mom, I don’t have unlimited time to craft all of my meals and ingredients from scratch. This “semi-homemade” meal is a great, balanced, filling and satisfying weeknight meal that makes it easier to eat more vegetables.
I also think the brand and types of chicken sausage and gnocchi you choose matters.
I prefer to use brands that have a simple ingredient list that features whole foods. (Bilinski’s, Applegate, and Amylu are brands I trust).
When it comes to gnocchi, they should be made with just a few ingredients.

I opt for a “Mild Italian” flavor, but you can really use any flavor you’d like, as this recipe is so versatile. PLANT-BASED SAUSAGES can work here too for a completely plant-based meal!
- Gnocchi are pillowy potato dumplings that contribute are a comforting and hearty addition. They crisp up beautifully in the oven, offering a perfect balance of textures with the roasted vegetables.
- Brussels Sprouts are a nutritional powerhouse, and the veggie of choice in this recipe. When roasted, Brussels sprouts caramelize and get crispy on the edges while staying tender inside. While halving, keep the extra leaves that fall off because they get extra crispy and delicious!
- Grape Tomatoes bursts when roasted and their natural sweetness comes through beautifully, complementing the savory flavors of the chicken sausage and Brussels sprouts.
- Oregano adds a fragrant Mediterranean flair to the dish and works well with Italian-style chicken sausage and roasted vegetables.

I try to make most sheet pan meals fully sheet pan meals, meaning you can mix the ingredients right on the sheet pan. This recipe is no different, so you only need a couple of kitchen tools, including:
- Sheet Pan: A large, rimmed baking sheet is essential for spreading out the ingredients and ensuring even roasting.

How to Make Sheet Pan Chicken Sausage and Gnocchi
This recipe is great for busy weeknights because it only takes a couple of hands-on prep steps:
First, prep the ingredients, sheet pan and oven.
Preheat your oven to 400°F. This temperature is perfect for roasting the ingredients, ensuring the sausage gets crispy and the gnocchi has that perfect texture.
Line a baking sheet with parchment paper or a silicone baking sheet.
Prep the Ingredients:
- I like to slice the chicken sausage on an angle into about 7 or 8 pieces per sausage.
- Trim and halve the Brussels sprouts, removing any tough outer leaves. You can also save time by purchasing trimmed and halved brussels sprouts.
Next, add all ingredients to the sheet pan.
Toss the brussels sprouts, grape tomatoes, gnocchi and chicken sausage in olive oil and season with oregano and freshly ground black pepper.
If you’re a garlic lover, you can add whole garlic cloves to the baking sheet as well, but garlic doesn’t agree with me so I leave that out!
Make sure everything is well-coated in oil to get the crispiest result!
Roast!
Spread everything evenly on the sheet pan. Make sure the ingredients aren’t too crowded, as this allows for better caramelization and crisping. If you’re feeding a big family, you may need to use another sheet pan.
Place the sheet pan in the preheated oven and roast for about 25-30 minutes, flipping the ingredients halfway through. The sausage should be browned, the gnocchi crispy on the edges, and the Brussels sprouts tender with crispy edges.
Serve and Enjoy!
Once everything is beautifully roasted, remove the pan from the oven and serve it hot.
You can top with grated parmesan cheese, add marinara sauce, or just enjoy as-is!

Ingredients
- 1 12 oz package Italian chicken sausage (see post for suggested brands), sliced diagonally into bite-sized pieces (see images)
- 1 16oz package fresh potato gnocchi
- 16 oz brussels sprouts, trimmed and halved with rough outer leaves removed
- 2 cups grape tomatoes
- Optional: 4-5 whole garlic cloves
- 1 1/2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 400°F. Line a large sheet pan with parchment paper or a silicone baking mat.
- Add the chicken sausage, gnocchi, brussels sprouts, grape tomatoes and garlic cloves (if using) to a large baking sheet. Drizzle with olive oil and sprinkle with oregano and black pepper. Toss everything together until evenly coated and spread out evenly on the baking sheet. Make sure the ingredients aren’t overcrowded for even roasting.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through to ensure everything browns evenly.
