Savory Pear Salad

This Savory Pear Salad is a must-make fall recipe featuring crispy bacon, earthy beets, nutty parmesan cheese, plus sweet dates and pears, dressed in a simple balsamic vinaigrette.

  • 4 slices bacon or turkey bacon (I used uncured, sugar free version from Applegate usually)
  • 5 oz baby lettuce mix (about 6 cups)
  • 3 steamed beets, chopped
  • 1 cup cooked quinoa
  • 1/3 cup shaved parmesan cheese
  • 1 large pear (I used a Red Anjou pear), thinly sliced
  • 1/4 cup sliced dates
  • Balsamic vinaigrette

Instructions

  1. Preheat the oven to 400F.
  2. Place the bacon on a foil-lined baking sheet (for easy clean up). Cook until crispy, about 18 minutes. Transfer to paper towels before chopping.
  3. While the bacon cooks, add the baby lettuce mix, beets, quinoa, parmesan cheese, pear and dates to a large bowl.
  4. When the bacon has slightly cooled, crumble it and add to the salad.
  5. Dress with the balsamic vinaigrette. Enjoy!
