medium shallot, sliced

15oz can white cannellini beans, rained and rinsed
¾ teaspoon
cumin
¾ teaspoon
dried oregano
½ teaspoon
garlic powder
¼ teaspoon
smoked paprika
¼ teaspoon
black pepper
½ cup
fresh parsley, coarsely chopped
2 tablespoons
olive oil
¼ cup
golden raisins
¼ cup
pumpkin seeds (pepitas)
½ cup
crumbled feta cheese

Instructions
Preheat the oven to 400°F. Line a baking sheet with parchment paper for easy clean up.
Add the cauliflower, shallot + beans to the baking sheet. Season with the spices and sprinkle parsley on top. Toss in olive oil.
Roast for 30 minutes, tossing halfway through.
When done roasting, add the raisins, pumpkin seeds, and crumbled feta cheese on top. ENJOY!
