If you’re guessing that mine is carrots… I’m pretty sure you’re correct! But not just any carrots… my carrots must be roasted to qualify as my favorite vegetable because they soften and caramelize in all the right places. It’s like veggie magic!
Not to mention, roasted carrots are currently one of the few vegetables my son actually eats, so I’m trying to change it up to broaden his flavor palatte.

Truth be told, I didn’t come up with this flavor combo. One of my favorite restaurants in NoHo in Manhattan sparked my love of roasted carrots. They have the best roasted carrots with dill, onions, and capers.
So I recreated it at home…

How to make Roasted Carrots with Dill and Capers
If you love dill, you’re going to LOVE this recipe. Caramelized carrots paired with bright dill are so flavorful!
First, toss carrots and red onions with fresh dill and olive oil. Make sure your carrots are well-coated in oil to ensure the outcome is soft roasted carrots. If you don’t use enough oil, the carrots can get crunchy, which we don’t want in this case.
Transfer the carrots and red onions with dill and oil to a parchment paper-lined baking sheet (for easy clean up). Roast for 35-45 minutes, until the carrots are soft to fork. Toss once in the middle of roasting.
Once the carrots are fully roasted, you’ll toss them in more dill and capers for a salty bite. Thanks to salty capers, this recipe does not have any added salt.

There are endless possibilities how to serve these roasted carrots with dill and capers, but my personal favorite is with a protein and carb in a balanced plate.

This Roasted Dill Carrots Recipe is the best carrot recipe of all time! Caramelized roasted carrots are tossed with sweet red onions, dill and capers, for a healthy side dish you’ll enjoy eating!
- Prep Time: 10 minutes
- Cook Time: 35 minutes
- Total Time: 45 minutes
- Yield: 4 cups 1x
Ingredients
- 4 cups carrots sliced on an angle
- 1 red onion, thinly sliced
- 2 tablespoons olive oil, divided
- 1/4 cup + 2 tablespoons dill
- 2 tablespoons capers
Instructions
- Preheat oven to 375F.
- In a large bowl toss carrots and red onion with 1 1/2 tablespoons olive oil and dill. Distribute carrots and onions on a large parchment paper lined baking sheet.
- Roast for 35-40 minutes, tossing once in the middle, until carrots are soft to fork.
- Transfer carrots to a large bowl and toss with additional fresh dill, capers, and 1/2 tablespoon olive oil. Serve warm.
