Pumpkin Energy Bites (Nut Free, Gluten Free)

Pumpkin Energy Bites taste like fall in a chewy and delicious bite. Ward off hunger, enjoy for a pre-workout energy boost, or satisfy your sweet tooth with no added sugar, but so much flavor!

Nut free, Soy free, Vegan, Egg free, Dairy free

Ingredients

  • 10 medjool dates, soft or soak in water until softened
  • ½ cup rolled oats
  • ¼ cup pumpkin seeds
  • ¼ cup + 1 tablespoon pumpkin puree (not pumpkin pie filling)
  • ⅛ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • Optional: 1-2 scoops protein powder

Instructions

  1. Add all ingredients to a food processor and pulse until combined and one large ball forms. You may need to pause to scrape down the sides to ensure all ingredients are combined. 
  2. Roll into 10 ~1-inch balls. Refrigerate to firm up.
  3. Store in the refrigerator for about 5 days.
