Passover Apple Matzo Kugel

Out of all of the Jewish holidays (and there are a lot), Passover is my favorite. I enjoy the family time, the special foods (even though most people dread it!), and the fact that Passover always signals the real beginning of spring to me!

What is Passover?

This holiday celebrates Jewish freedom from slavery under the rule of Pharaoh in ancient Egypt.

Whether you’re Jewish or not, you have probably seen boxes of matzo, a flat unleavened bread, in your supermarket. It is said that the Israelites did not have sufficient time to wait for bread to leaven after Pharaoh declared their freedom. This is why Jews do not consume leavened bread for the eight days of Passover.

Jewish families around the world gather for the seder (meaning: “order”) on Monday and Tuesday evenings. One of my favorite Passover foods, since childhood, is my mom’s Apple Matzo Kugel! Before you go shopping, add these ingredients to your list!!

Apple Matzo Kugel Recipe

Kosher for Passover kugel recipe made with apples, raisins, and matzah!

Ingredients

  • 4 whole wheat matzos
  • 4 regular matzos (I strongly recommend NOT using 100% whole wheat varieties)
  • 6 large eggs
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 stick butter, melted
  • 2 teaspoons cinnamon
  • 4 large apples, pared and chopped (I used Macintosh)
  • 3/4 cup raisins
  • Additional butter to pat on top

Instructions

  1. Preheat oven to 350F. Spray a 13 x 9 baking dish with oil spray. Set aside.
  2. Break matzos into pieces and place in a medium-sized bowl. Soak in water until soft. Drain water, but do not squeeze dry. Set aside.
  3. In a large bowl, vigorously mix together eggs, sugar, salt, melted butter, and cinnamon.
  4. Add matzos to the egg mixture.
  5. Stir in chopped apples and raisins.
  6. Transfer mixture to the baking dish. Dot additional butter on top and sprinkle with additional cinnamon.
  7. Bake for approximately 45 minutes, or until lightly browned on top. If cooking prior to serving, bake for 30 minutes, then finish the last 15 minutes prior to serving. Enjoy!
