I can’t tell you how excited I am to share this recipe with you… it kind of happened by accident one night in my kitchen.
Isn’t late night baking the best?! Lately, it’s the ONLY way for baking to happen with the heat and humidity we’ve been having!
But these cookies aren’t just an accident… they have a bit of a story with them, and it has to do with CRAVINGS…
When we were in D.C. a few weeks ago, ALL I wanted was a cookie. I wanted a chewy in the middle, crispy on the edges chocolatey, buttery, chocolate chip cookie. A REAL cookie – with butter and sugar and flour. Gluten-filled…dairy-filled… SUGAR FILLED… the whole she-bang!
Can’t you just taste it?!?
But I couldn’t just stroll right into any bakery in D.C. to satisfy my craving, thanks to my allergies.
So what happened?
My chocolate chip cookie craving went unanswered for days.
Sure, I had food allergy friendly chocolate with me (always gotta be prepared when traveling!), I had other satisfying foods at some of D.C.’s best restaurants, but I realllllly just wanted the freakin’ COOKIE!
On Sunday, we stopped into Whole Foods to pick up a snack for our train home, and I found these nut-free chocolate chip granola bites that I thought would take the edge off until I could whip up a batch of my favorite cookies at home… but it didn’t work (even though they were delish!). I proceeded to eat half of the bag, then more chocolate, and more… but I wasn’t satisfying my craving. I was eating AROUND it.
Have you ever been there?
Take a pizza craving… you know, a New York slice with melty cheese, doughy bread… sorry, but I don’t think cauliflower pizza is going to satisfy that craving… and I loooove me some cauli pizza!
So what should you do?
SATISFY YOUR CRAVINGS!
It’s revolutionary, I know!
Sure, there are times when something else – a la portobello pizzas – will satisfy your pizza cravings. Or these blueberry chocolate chip pancake cookies will satisfy your chocolate chip cookie cravings…
But if you’re always looking for a healthier version to replace your craving, it’s likely that you may end up eating AROUND it.
What happens then? You’ll end up eating more than if you were to just satisfy your strong food craving in the first place! And that can lead to feelings of guilt, food remorse, and shame.
No bueno.
So how do you know if you should honor your craving or look for a healthier, but also delicious, substitution?
Sorry to say, but it’s personal – there’s no “one size fits all” approach to getting in touch with your cravings, but I find these 2 steps help both myself and my clients figure it out:
- Identify your craving, specifically
- Identify the emotions surrounding your craving

Here’s how I do it…
The first step is to identify what you’re craving. You could say pasta… but are you actually in the mood for carby, al dente pasta? Or is pasta the vehicle to satisfy your bolognese sauce craving?
In that case, zoodles with your delicious sauce may do the trick. Or maybe a higher protein and fiber lentil pasta?
If you identify the pasta itself as your craving, then GO FOR IT! Satisfy your craving with REAL pasta – go to your favorite pasta restaurant and savor every bite…
But first, I always suggest getting in touch with your emotions surrounding the craving. As much as we may think that it’s the pasta we’re craving, maybe it’s a feeling of warmth or comfort after a hard day at the office. Or maybe it’s a childhood favorite and you’re missing the comforts of home (adulting, anyone?!).
Sometimes – not all the time – our food cravings can be tied to how we feel… but that’s a whole other story! It’s important to identify if your cravings are tied to an emotion you’re feeling – stressed, anxious, sad, happy, etc. – or just because you’re in the mood for a particular food!
That’s not to say that if your craving is attached to an emotion that you shouldn’t satisfy your craving, but being mindful of the root of your craving is an empowering step to getting in touch with your body! So, did I satisfy my CCC craving?! You betcha! After the weekend, I turned on my oven and got baking, because I knew that was the only way I’d truly satisfy my craving!
And one creation I made… these blueberry chocolate chip pancake cookies!
I didn’t expect these cookies to be the pillowy softies that they turned into, but I’ve made at least 5 batches since because they’re THAT good!
And THAT good for you…
These cookies are actually gluten free and grain free, thanks to the use of coconut flour. Coconut flour is one of my favorite allergy-friendly flours to use because it’s full of FIBER! Just 1/4 cup of coconut flour has 12 grams of fiber. Yes, these are a sweet treat, nutritious enough for breakfast (hence the name!).
And made in just 1 bowl! Combine all of the ingredients in 1 bowl, scoop onto a baking sheet and enjoy!

Blueberry Chocolate Chip Pancake Cookies
- Prep Time: 5 minutes
- Cook Time: 25 minutes
- Total Time: 30 minutes
- Yield: 6 large cookies 1x
Ingredients
- 1 mashed banana
- 3 large eggs
- 1/4 cup liquid coconut oil
- 1 teaspoon pure vanilla extract
- 1/3 cup coconut flour
- 2 teaspoons baking powder
- Pinch of salt
- 1/4 cup blueberries
- 2 tablespoons chocolate chips
Instructions
- Preheat oven to 350°F.
- In a large bowl, mash banana with a fork, until most lumps are dissolved, then add eggs, coconut oil, and vanilla extract. Mix together until smooth and uniform consistency forms.
- Then mix in coconut flour, baking powder, and salt, being careful not to overmix. The batter will be slightly lumpy, and thicker than traditional pancake batter. Carefully fold in blueberries and chocolate chips.
- Place about 1/4 cup of batter on a lined baking sheet. You can make 6 large pancake cookies, or 12 smaller cookies.
- Bake at 350°F for 25 minutes, or until the cookies are golden brown. Let cool completely before enjoying!

Girl I love this post! As someone who LOVES food but also struggled with disordered eating, I think learning to satisfy your cravings without the guilt is the hardest but also one of the most important steps to recovery. The cookies also look so bomb!
