1 15oz can pumpkin puree (not pumpkin pie filling)
2 eggs
1/3 cup unsweetened applesauce
1/4 cup milk or non-dairy alternative
2 tablespoons maple syrup
1/2 cup brown sugar (not packed)
3 cups oat flour
1 tablespoon cinnamon
1 teaspoon ground ginger
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup finely chopped apple
1/2 cup chocolate chips
Instructions
Preheat oven to 350F. Line a loaf pan with parchment paper.
In a large bowl mix together pumpkin puree, eggs, applesauce, milk, and maple syrup until well-combined.
Add brown sugar and mix until no clumps remain.
Add oat flour, cinnamon, ground ginger, baking powder, and salt. Mix until just combined. Do not over mix. Fold in apples and chocolate chips. Add additional chocolate chips on top, if you wish.
Transfer batter to the lined loaf pan. Bake for 40 minutes, until a toothpick comes out clean. Let cool completely before slicing.
