Ingredients

4 ounces Edamame spaghetti or buckwheat noodles

1 cup shredded carrots

1/4 cup sliced scallions (green onions)

2 tablespoons crushed sunflower seeds

For the sauce:

1/4 cup No Added Sugar SunButter

1 tablespoon low-sodium soy sauce

1/2 tablespoon rice vinegar

1/4 teaspoon garlic powder

1/4 teaspoon ground ginger

1/4 teaspoon crushed red pepper flakes

Pinch of black pepper

1/4 cup water

Instructions

  1. Prepare pasta according to package instructions, until al dente.
  2. While pasta is cooking, prepare your SunButter sauce. In a small bowl combine all sauce ingredients, mixing together until uniform consistency forms. The sauce should be runny, but not too thin.
  3. When pasta is done cooking, transfer pasta to a large bowl with lid. Add shredded carrots, scallions, and the sauce. Mix together until pasta is evenly coated with sauce.
  4. Refrigerate for at least 1 hour. Enjoy cold!
