There’s nothing I love more than a sheet pan meal. As a busy mom, sheet pan meals are great to not only get dinner on the table quickly, but for easy clean up (which is just as essential, if you ask me!).

BUT (!!) the same old chicken and veggies sheet pan meal can get boring after a while, which is why I love this cutie sheet pan mini meatloaf recipe – it’s just a little different!

You’ll need just a handful of ingredients to make this Sheet Pan Mini Chicken Meatloaf recipe, including…

  1. Gold potatoes may be my favorite potato. They’re almost sweet with a delicious buttery texture. Of course, you can use any potato you love. The key in this recipe is to slice them really thin.
  2. Oil is the fat added to this recipe to help the potatoes and green beans crisp. I prefer to cook with avocado or olive oil.
  3. Ground chicken is one of my favorite ground meats to use because it has a mild taste (definitely milder than ground turkey).
  4. Panko breadcrumbs help hold the meatloaf together. I like panko breadcrumbs because they’re super light, but you can use any breadcrumbs too.
  5. Garlic adds so much flavor, but also nutritional benefits too.
  6. Tons of spices, including dried oregano, smoked paprika, dried thyme, salt and pepper.
  7. Trimmed green beans are my veggie of choice for this sheet pan recipe because they cook pretty quickly and don’t need much time at all.
  8. Ketchup is my secret meatloaf ingredient. My mom would always top meatloaf with ketchup, so now I do too. It’s so good. Just trust the process.

How to Make This Sheet Pan Mini Chicken Meatloaf recipe

This recipe is super easy to make, but does take a few steps.

First, you’ll thinly slice the potatoes. Slicing the potatoes thinly ensures they’ll cook quickly. Add them to a large baking sheet and coat in oil and sprinkle salt on top. The potatoes need more time to cook than the remaining ingredients, so you’ll add them to the oven first.

Next, prepare the meatloaf mixture. Combine the ground chicken with garlic, panko breadcrumbs and spices until well combined. Set aside until the potatoes are par-cooked.

When the potatoes begin to soften, you’ll add the remaining ingredients to the sheet pan. Carve out space and shape the meatloaf mixture into 4 meatloaves. Add the green beans to the sheet pan and spray with oil spray and additional salt. Divide the ketchup amongst the meatloaves and spread into a thin layer.

Return to the oven to let finish cooking.

Ingredients

  • 1 lb gold potatoes, thinly sliced
  • 2 tablespoons avocado or olive oil
  • 1 ¾ teaspoons kosher salt, divided
  • 1 pound ground chicken
  • ¼ cup panko breadcrumbs
  • 1 teaspoon finely chopped garlic
  • ½ tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 12 oz trimmed and cleaned green beans
  • 1/2 cup ketchup

Instructions

  1. Preheat the oven to 375°F. 
  2. Toss the potatoes with oil and distribute on a large baking sheet lined with parchment paper for easy clean up. Sprinkle with kosher salt. Roast for 15 minutes.
  3. While the potatoes start to roast, prepare the mini meatloaves. In a large bowl combine the ground chicken, panko breadcrumbs, garlic, dried oregano, smoked paprika, dried thyme, ¼ teaspoon salt and pepper. Mix together until spices and breadcrumbs are evenly distributed. Divide into 4 pieces. Set aside.
  4. After 15 minutes, remove the potatoes from the oven. Add the green beans and spray with nonstick oil spray and sprinkle with additional salt, about ½ teaspoon. 
  5. Carve out 4 holes on the baking tray for the mini meatloaves. Shape the ground chicken into mini meatloaves and place on the baking sheet. Divide the ketchup on top of each mini meatloaf. Spread into a thin layer.
  6. Bake for another 20 minutes, or until the internal temperature reaches 165°F. Enjoy warm!
