Potatoes may be my love language.
I know that’s a tad dramatic, but it’s true. I love them in almost all of their forms (sorry mashed potatoes, you just don’t do it for me!).
But my FAVORITE potato is probably a SMASHED potato.
Now, you may be thinking that I just said I don’t like mashed potatoes and “mashed” is included in “smashed,” but they’re actually totally different.
Mashed potatoes get all creamy. I’m just not about that texture. I like to chew. Plus, mashed potatoes remind me of a hospital pureed diet from when I was doing my dietetic internship at NYU. Nothing wrong with that if that’s what you need, but when that’s not necessary, no thank you!
Smashed potatoes – when done right – on the other hand, have crispy edges and skin that is everything you love about a french fry, but more oomph on the inside.
And yes, french fries are a close second if I were to rank how I like my potatoes!
So when I received a couple bags of fingerling potatoes from my friends at Cal Organic Farms (one of my favorite veggie suppliers with the BEST quality!), I knew it was going to be a good week.

Ingredients you’ll need to make High Protein Avocado Dip
Cottage cheese is a high protein food that’s extra creamy and makes the perfect addition to a dip.
I know what you’re thinking… “cottage cheese is diet food.” But my friends, it’s not!
In fact, I never liked cottage cheese until I lived in Israel and “cottage” (as they call it) is SUPER popular (it is the land of dairy, after all). Really good cottage cheese is creamy and totally delicious, so I suggest trying it.
Not to mention, it’s PACKED with protein. A single-serve container packs a whopping 20-30 grams of protein!
This recipe uses a half-cup for a staggering 15(ish) grams of protein added to an otherwise low protein side dish.
Avocado adds healthy fats to this High Protein Avocado Dip.
This provides staying power so you don’t have a blood sugar crash slowly after eating your potatoes on their own. A well-balanced eating occassion contains protein, fats and carbs, and this totally fits the bill.
Scallions add tons of flavor with minimal spices.
How to Make Creamy High Protein Avocado Dip
It’s super simple to make this dip in a food processor. Just add all ingredients, blend, and adjust the seasonings as you see fit.
How to Make Crispy Smashed Potatoes
You only need 3 ingredients to make crispy smashed potatoes:
- Potatoes
- Olive oil
- Kosher salt
What type of potatoes should you use for the best crispy smashed potatoes?
Baby gold potatoes are the best potatoes to use to smash. My runner-up would be fingerling potatoes, as pictured here. It’s especially fun to make the tricolored potatoes to switch things up. They seriously do all taste slightly different!
Crispy Smashed Potatoes are fairy simple to make, but it is a 2-step process.
Step 1. Boil the potatoes
It’s essential to cook the potatoes until soft so they’ll smash. It takes about 15-20 minutes to soften the potatoes. Of course, fingerling potatoes will take a tad longer to cook compared to baby gold potatoes.
Step 2. Smash and roast the potatoes until crispy
Once you drain the water from the boiled potatoes, pat them dry with a clean towel. Then add them to a baking sheet.
Using a glass, smash the potatoes.
Drizzle with olive oil and sprinkle with kosher salt. Then bake for just another 25 minutes until the edges get crispy!

- Stock pot with lid
- Water glass
- Baking sheet
- Parchment paper or silpat
- Food processor

Ingredients
Crispy Smashed Potatoes
- 1.5 pounds fingerling or baby potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Creamy Avocado Dip:
- 2 medium avocados
- ½ cup cottage cheese
- 2 scallions or green onions, chopped
- Salt and pepper to taste
Instructions
- Bring a large stock pot of water to a boil. Once the water is boiling, add potatoes and cook until soft to fork, about 15-20 minutes. Larger potatoes will take longer to cook.
- Drain the potatoes and pat dry with a towel once cool enough to handle.
- Preheat the oven to 400F.
- Distribute the potatoes on a parchment paper lined baking sheet. Using the bottom of a glass smash the potatoes until the skin breaks. Don’t press too hard!
- Drizzle with olive oil and season well with salt and pepper, about ½ teaspoon salt and ¼ teaspoon pepper. Roast potatoes for 25 minutes, until crispy.
- While the potatoes roast, make the creamy avocado dipping sauce (recipe below).
- Serve together as a delicious side dish or snack!
For the Creamy Avocado Dipping Sauce:
- Place all ingredients in a food processor. Process until smooth. You may need to pause to scrape down the sides of the container. Taste and adjust seasonings. Serve alongside the crispy smashed potatoes.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
