Healthy Lemon Basil Shrimp with Pasta

Ingredients

  • 1 ½ tablespoons olive oil, divided
  • 1 leek, very thinly sliced (white and light green part only), about ½ cup
  • 1 medium zucchini, thinly sliced into half moons
  • 2 cloves garlic, finely chopped
  • 1 pound shrimp, peeled, cleaned and deveined
  • 1 lemon, zested and juiced
  • ½ cup basil leaves, chopped
  • 8 ounces spaghetti (gluten free, if needed)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Bring a large pot of heavily-salted water to a boil. Add pasta once the water boils and cook according to the package instructions.
  2. Heat 1 tablespoon of olive oil in a large skillet. Once hot, add leeks and zucchini, cooking until it begins to soften, about 3-4 minutes. Then add garlic. Continuing cooking, moving the vegetables around the pan for another 2 minutes. Season with black pepper.
  3. Add the shrimp along with lemon zest and juice. When begin to turn opaque on one side, flip the shrimp, and add basil. Season with salt and additional black pepper. Remove from heat before shrimp are fully cooked because they will continue cooking when you add the pasta.
  4. Once the spaghetti is done cooking, drain and add to the shrimp and vegetables. Toss together with an additional ½ tablespoon olive oil, basil and lemon zest. Enjoy warm.
