What makes this mug cake “healthy?”
Compared to traditional mug cake recipes, this one has a few nutrient-rich ingredients that makes it “healthy.”
That’s not to say you shouldn’t eat other mug cakes that don’t use these ingredients, but these ingredients will help you feel your best – so why not have your cake and feel good too?!
“Healthy” ingredients include:
- Oat flour for a higher fiber flour
- Chocolate SunButter for healthy fats from sunflower seeds
- No refined sugar (OK, except for chocolate chips!)
Ingredients to Make a Healthy Chocolate Mug Cake
You only need 7 ingredients to make this chocolate-loaded mug cake:
- Egg white
- Chocolate SunButter
- Maple syrup or another liquid sweetener
- Oat flour
- Cocoa powder
- Baking powder
- Chocolate chips
But let’s talk about the inspiration for this mug cake: Chocolate SunButter!
I have been working with SunButter for over 2 years and I love it when they come up with new products and flavors. As someone who could never have Nutella because of my tree nut allergies, I finally feel included (and boyyyy is it goooood!).
Chocolate SunButter is made with just a handful of ingredients: sunflower seeds, sugar, unsweetened chocolate, cocoa powder, salt, and vanilla flavor. That’s how you make a delicious product – you keep the ingredients simple!
They even call it nutritiously indulgent on the label because it is – there’s actually great nutrition packed in every spoonful from plant-based protein to healthy fats.
And now you can enjoy it in this mug cake!
Ingredient Substitutions
I know you want to make this ASAP and you may not have time to wait for your Chocolate SunButter to arrive, so here are some ingredient swaps:
Instead of Chocolate SunButter, try regular SunButter.
No, the flavor won’t be as chocolatey, but it will still be delicious! We want those healthy fats in there, so don’t skimp on the SunButter.
Instead of maple syrup use honey, agave syrup, date syrup, or any other liquid sweetener.
This recipe is pretty flexible. I love the flavor of maple syrup, but you can truly use any liquid sweetener. I don’t suggest swapping in white or brown sugar because those are dry ingredients and will “mess up” the ratios!
Instead of oat flour use all-purpose flour.
Yup, it works. But I like using oat flour to add a whole grain, more fiber and nutrients. But it totally works with all-purpose flour.
How to Make a 2-Minute Chocolate Cake
Yup, you literally make this entire recipe in a mug and then eat it from a mug. Obviously this is totally awesome because you have minimal clean up and a delicious cake to enjoy – win win!
I tested this recipe quite a few ways, but found this was the best method…
In a large mug (and I mean large), mix together the wet ingredients first, including egg white, water, maple syrup, and Chocolate SunButter. Yes, the Chocolate SunButter is more dense than the other liquids, but use a fork and as I tell my toddler, “those muscles” to mix.
Then add the dry ingredients, including oat flour, cocoa powder, and baking powder. Once uniform consistency forms, really making sure you scrape the bottom of the mug so there’s no flour hanging out on the bottom, sprinkle in a few chocolate chips.
Microwave – yes, you’ll microwave – for 2 minutes. If your batter takes up more than half of your mug, I suggest microwaving with a plate underneath *just in case* the cake expands and spills over – easy clean up.
And voila – you have a cake! I like to add a few additional chocolate chips on top and an extra drizzle of Chocolate SunButter, because yes, I’m extra and it tastes better that way.
So, are you ready to try it?!
