It’s finals.

I’m officially on the *5* day countdown {say it with me — “WOOOO!”} to freedom! As much as I LOVE school and what I’m studying…crunch time is never any fun!

So, I should’ve been more prepared. I know, bloggers are supposed to have schedules and stick to them…I’m really no good at that…let’s add it to my New Years resolutions list (it just seems to keep growing!). So I don’t have a new recipe to share with you, but an updated version that’s adaptable to be free of the top 8 allergens!

But I promise, my mishap is your gain…because this is one of the BEST smoothie recipes out there…

This recipe, adapted from Oh She Glows to fit my nut-free life, was one of the first recipes published here over a year ago! It’s definitely time to introduce it again…especially for all my new readers {HI!}.

This smoothie is packed with fiber, protein, and healthy fats — perfect for a busy day studying (and if you’ve seen my Instagram lately you know I’ve been sipping them frequently!)! Even if you’re not studying for finals, this is a refreshingly light way to start your day during the busy holiday season (it totally offsets all of those gingerbread cookies…)!

Keep in mind that the recipe below is flexible so you can swap ingredients as you see fit to work within your dietary restraints.

Allergen-Friendly Green Monster Smoothie

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 1 serving

Ingredients

  • 1/2 banana, frozen and cut into pieces
  • 1/3 cup milk of choice (soy, almond, rice, cow, coconut all work)
  • 1 tablespoon sunflower seed butter (alternative: almond butter or peanut butter)
  • 3-4 cups (organic) baby spinach

Instructions

  1. Blend together until smooth and enjoy!
