I’ve been a fan of green breakfast foods for quite some time… First, it was the classic spinach in my eggs turned into egg muffins, then my green smoothie phase, sheet pan green protein pancakes, and now these green blender waffles. 

These Green Blender Waffles are…

  • Easy to make in the blender + waffle iron (no other kitchen tools necessary!)
  • Delicious
  • Packed with fiber and protein
  • Great for meal prep (they re-heat great – I prefer the oven)
  • Satisfying
  • Sugar-free
  • Part of a balanced meal

It can be hard to get those greens in sometimes! Including greens at breakfast can just give your day a little boost… but you don’t need one of those green powders.

Here are 5 top benefits of eating greens…

  1. They’re high in FIBER – a nutrient most people don’t eat enough of (pssst – you need 25-35 grams per day!)
  2. Dark leafy greens are packed with FOLATE – especially important for women of childbearing age
  3. Many greens are a source of plant-based CALCIUM – these include kale, spinach, collard greens, beet greens, and more
  4. Greens contain IRON – pair with a source of vitamin C for it to become more absorbable in your body.
  5. They’re packed with ANTIOXIDANTS – those little phytochemicals that help reduce inflammation and your risk of chronic diseases, plus promote overall health.

So while a great big salad is fantastic for your health, you may not always be in the mood. Especially in the colder months, I know I have trouble eating more veggies if they’re not warm and in soups…. And that’s where these Green Blender Waffles come in. 

Plus, they’re a great way to add greens to your kids diets if they don’t like seeing the leafy greens themselves.

No, I’m NOT encouraging you to HIDE GREENS from your kids!!!

I believe in transparency when it comes to feeding your kids or your partner.

There’s nothing wrong with telling your kids that these waffles are green from spinach – it’s just another way to introduce spinach to your kids. I even have my son make these with me, putting the spinach in the blender himself so he has an additional exposure of touching greens.

When you hide vegetables from your kids you’re teaching them that they should be hidden. Instead, consider this another way to expose your kids to spinach.

OK… so back to these Green Blender Waffles.

Ingredients to Make Green Blender Waffles

You only need 5 ingredients to make these Green Blender Waffles:

  1. Bananas
  2. Eggs
  3. Rolled oats
  4. Baby spinach
  5. Cinnamon

And of course I also add some salt.

Bananas add natural sweetness without any added sugar. I don’t have a swap for bananas if you don’t like them, but you could test out canned pumpkin puree. However, you’d then have brown waffles, not green!

Eggs add protein and stability to these blender waffles.

Rolled oats add fiber and oomph to this recipe. Yes, there are some “protein pancake” recipes that are only made with banana and eggs, but those fall a bit flat. The rolled oats make these waffles way more filling.

Baby spinach doesn’t only turn these waffles green, but it also provides tons of nutrition, as mentioned above. Folate, iron, vitamin K, fiber, and antioxidants are all packed in this simple recipe.

How to Make Green Blender Waffles

This recipe could not be easier to make! First, add all ingredients to a high-powered blender. Blend until smooth.

Then, it’s time to cook your waffles! I love this mini waffle iron I bought at Target (it also comes in a heart shape – perfect for Valentine’s Day!). Add about 1/4 cup of the batter to the waffle iron (sprayed with nonstick spray) and cook for just a few minutes. The waffles will be golden green when done.

Serve warm with fruit, syrup, nut/seed butter, or however you love to enjoy waffles!

Can you make these waffles in advance?

Absolutely! I love to double the batch and freeze half. They also store great in the fridge. 

How should you store these Green Blender Waffles?

If you’re not enjoying immediately, I suggest allowing the Green Blender Waffles to cool completely before storing in a freezer-safe bag. 

When reheating, I suggest warming in the oven for best results.

Green Blender Waffles

Ingredients

  • 3 small to medium ripe bananas
  • 6 large eggs
  • 1 cup rolled oats
  • 3 cups baby spinach
  • ½ teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a high-powered blender or food processor combine bananas, eggs, oats, baby spinach, cinnamon and salt. Blend until smooth.
  2. Heat your waffle iron. Spray with nonstick cooking spray.
  3. Pour enough batter into the waffle iron to fill it (this amount varies based on the size of your waffle iron). Cook until golden brown and cooked through. For my mini single-serve waffle iron I added about ¼ cup of batter and cooked for just 3 minutes.
  4. Serve with fruit, yogurt, maple syrup, etc.
