Holiday baking season is upon us and boy am I happy about it. The holidays are my favorite time of the year between fun parties, delicious food, and a festive environment – what could be better? Plus, everyone is in a better mood… probably because everyone gives themselves permission to enjoy sweet treats!
That’s the thing about giving yourself permission to enjoy treats. When you stress less about it, you can enjoy them more. It’s logical and may seem easy, but it’s actually quite difficult to give yourself complete permission.
But I hope that you can give yourself that gift this holiday season. The gift of enjoying the sweet treats you love without guilt. Without stress. Without “burning it off.”
How? Start with keeping treats in the house. It may seem counterintuitive, but the more you’re exposed to treats, the less you’ll want them all the time. You won’t feel like eating the entire batch because you can have them ANY time! (funny how that works…)
So, let’s talk about these Flourless SunButter Cookies…
These cookies could not be easier to make. You add all SIX ingredients to a bowl. Mix together with a spoon (no special equipment needed). Scoop onto a baking sheet and flatten with the palm of your hand. Bake, let cool, then eat.
Seriously… don’t skip the “let cool” part. If these cookies aren’t completely cool then they’ll crumble in your hands. You don’t want crumbly cookies and neither do I.
What’s in these cookies?
6 ingredients! That’s it!!
- Creamy SunButter
- 1 large egg
- Pure vanilla extract
- Light brown sugar
- Your mix ins (I used cranberries and chocolate chips)
The Creamy SunButter adds TONS of flavor, healthy fats, protein, and even some fiber to these cookies. Yes, a cookie is a cookie is a cookie… BUT, these do have some nutritious benefits too! I didn’t add any chemical leaveners (like baking soda or baking powder) because they react with the sunflower seeds and will turn your cookies green. Instead, the egg helps.
Plus, the egg helps these cookies stick together. I’m honestly not sure if a vegan egg substitute (like a flax egg or chia egg) would work – but if you test it out, let me know.
Then I chose to use light brown sugar for just a hint of molasses flavor, without an overpowering molasses flavor (as you would get from dark brown sugar).

Flourless SunButter Cookies
- Yield: 12–16 cookies 1x
Ingredients
- 1 large egg
- 1 cup Creamy SunButter
- 1/3 cup light brown sugar
- 1/2 teaspoon pure vanilla extract
- 1/4 cup chocolate chips
- 1/4 cup dried cranberries
Instructions
- Preheat oven to 350°F.
- In a large bowl mix together SunButter, egg, sugar, and vanilla until well combined. Fold in chocolate chips and dried cranberries.
- Scoop dough into 1-inch balls and place on a parchment paper-lined baking sheet. Slightly flatten with the palm of your hand. Bake for 10 minutes until the tops appear set.
- Remove cookies from the oven and let cool completely on the baking sheet. This part is very important! Once cooled, store in an airtight container.
