Easy Sheet Pan Chicken and Veggies

For the veggies:

  • 1 cup zucchini coins (about 1 large zucchini) 
  • 1 cup chopped asparagus 
  • 1 cup quartered baby potatoes 
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt 
  • 1/8 teaspoon black pepper 

For the chicken: 

Instructions

  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper, set aside.
  2. In a large bowl toss vegetables with 1 tablespoon olive oil, salt and pepper. Place on parchment paper lined baking sheet.
  3. Add chicken to the same bowl and toss with olive oil and spices. Add to the baking sheet. 
  4. Bake at 375°F for 20-23 minutes, until the internal temperature of the chicken reaches 165°F and the vegetables are soft to bite. Serve warm. Enjoy!
