Juice from 1 lemon
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil (or fresh)
¼ cup chopped fresh parsley
Salt and pepper to taste
Zest from 1/2 lemon
1 lb chicken breasts or thighs, cut into 1-inch chunks
Nonstick oil spray
Instructions
In a large bowl combine lemon juice, olive oil, oregano, basil, parsley, salt and pepper and lemon zest. Add the chicken and toss together. Cover and refrigerate for 30 minutes.
When ready to cook, preheat a large skillet over medium heat. When the pan is hot, spray with nonstick oil cooking spray.
Add the chicken to the pan, cooking for 3 minutes on each side or until the internal temperature reaches 165°F. Enjoy!
