Easy Cucumber Salad + Signs of Dehydration

Last week it was HOT, HOT, H-O-T here in New York. I didn’t even want to eat I felt so swollen from the heat… you know when it’s so hot and humid that your rings don’t fit?
OK, you get the point!
We spent one of these hot, hot, HOT days at the Yankee game and despite staying so hydrated, we were absolutely exhausted when we got home. The last thing I wanted to do was cook! (Yes, I have those moments, believe it or not!)
Luckily, we had a stocked fridge full of fresh summer produce – tomatoes, red onions, cukes, jalapeños – the GOODS!
I threw them all together with some fresh herbs we had laying around and all of a sudden my appetite returned!

Anyways, I’m a huge fan of cucumber salads ever since I lived in Israel. I mean, have you ever had Israeli salad? Soooo good!
Well, this is a fresh take on my favorite parts of a refreshing Israeli salad – all fresh veggies, plus JALAPEÑOS to spice some things up! Isn’t that a fun side dish at your next BBQ?
Before I share the recipe and fun video I threw together to show you just how easy this recipe is to whip up, I wanted to talk about how HYDRATING veggies can be!
Did you know that you can actually meet part of your hydration needs from FOOD? Yessirrr!
Cucumbers are 96% water! Tomatoes are 94% and onions are 89%. Add that all together and that’s a whooole lotta water in this salad.
Pay attention to these signs of dehydration, especially on these hot, hot, hot summer days…
- Dry mouth
- Dizziness
- Fatigue
- Dry skin
- Infrequent urination (and yellow urine)
- and more
And about that urination… I know it’s not the sexiest topic (especially when we’re also talking about food ????), but it’s SO important to look in the toilet bowl! The goal is for your urine to be pale yellow to almost clear.

PrintEasy Cucumber Salad
Ingredients
- 2 cups sliced baby cucumbers
- 1 cup halved grape or cherry tomatoes
- 1/2 cup sliced red onion
- 1 jalapeño, sliced (cored and de-seeded, if less heat desired)
- 1/4 cup roughly chopped fresh cilantro (or parsley)
For the dressing:
- 3 tablespoons good quality olive oil
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/8 teaspoon sea salt
- 1/8 teaspoon black pepper
Instructions
- Add cucumbers, tomatoes, onion, jalapeño, and cilantro to a medium-sized bowl and set aside.
- In a small bowl combine olive oil, vinegars, oregano, salt and pepper and mix with a fork until uniform consistency forms.
- Drizzle half of the dressing over salad and mix to combine. Taste, and add more dressing to taste. Enjoy!
Notes
May prepare salad for up to 1 hour in advance of serving.
