Easy Cannellini Bean Veggie Burgers with Dill and Parsley

Ingredients

  • 1 tablespoon ground flax seed meal
  • 1 15oz can white cannellini beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/2 cup breadcrumbs (gluten free, if needed) or quick-cooking oats
  • 3 tablespoons chopped kalamata olives
  • 3 tablespoons chopped dill
  • 3 tablespoons chopped parsley
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • ¼ teaspoon each salt and pepper (more to taste)
  • Red chili flakes, to taste (optional)
  • Extra virgin olive oil or nonstick spray for cooking
  • Optional: 1/4 cup feta cheese

For serving:

  • Whole grain pita
  • Tzatziki
  • Hummus
  • Pickled onions

Instructions

  1. In a small dish combine ground flax seeds and 6 tablespoons of water. Mix and set aside for at least 10 minutes.
  2. In a large mixing bowl, mash beans with a fork. Then add the remainder of the ingredients, including the flaxseed mixture and mix well.
  3. Form into 4 patties.
  4. Heat oil-coated skillet over medium-high heat. Once the skillet is hot (this is important!), cook patties for 4-6 minutes on each side, carefully flipping, until a golden crust forms. Serve immediately with hummus and/or tzatziki over salad or stuffed in a whole grain pita.
  5. Leftovers can stay refrigerated for up to 5 days.
