I’ve got the SUMMER BUG! No, not the sick bug (thank goodness!), but the I want everything that screams summer bug. I’m talking everything grilled, allllll the berries, and of course, TOMATOES!
As much as I’m not a fan of the summer heat, I am a huge fan of summer food (SHOCKER!).
Tomatoes happen to be at the top of my summer list because aren’t they just the sweetest thing ever?
Every year my dad plants his own garden, and tomatoes always make an appearance. In fact, I have vivid memories of playing on the swing set in our backyard, hopping off and grabbing a handful of the sweetest tomatoes ever, and then going back to playing… I guess I was always a fan of snacks! 🙂
Recently, my mom has been making balsamic roasted tomatoes for our family gatherings, and they provide SO much flavor to a veggie platter. Plus, when you use the cherry tomatoes on the vine, they look so elegant… without the work of elegance 😉
So the next time you’re looking for something a little different, but easy, peasy, cherry tomato squeezy, I hope you try out these easy balsamic roasted tomatoes!

Easy Balsamic Roasted Tomatoes
Ingredients
- 28 ounces cherry tomatoes (organic preferred)
- Olive oil spray (I use my Misto)
- Generous pinch of salt
- 1 1/2 teaspoons balsamic glaze (I use Trader Joe’s)
Instructions
- Preheat oven to 300°F.
- Line a baking sheet with tin foil or parchment paper. Place tomatoes on the baking sheet and spray with olive oil and a generous pinch of salt.
- Bake for 15 minutes, then remove from the oven and drizzle with balsamic glaze. Return to the oven for another 15 minutes, until tomatoes are blistered. Enjoy!
