Preheat oven to 350°F. Coat a loaf pan with oil spray or parchment paper and set aside.
In a large bowl, whisk eggs. Then mix in sugar, oil, zucchini, and vanilla extract.
Add flour, cocoa powder, salt, baking soda, baking powder, and 1/4 cup chocolate morsels. Mix together until uniform consistency forms, but be careful not to overmix.
Pour batter into your prepared loaf pan and add the additional 1/4 cup chocolate chips on top.
Bake for 45-55 minutes, or until edges brown and slightly pull away from the sides of your pan, or an inserted toothpick comes out clean.

Notes
*Note: For gluten free version, use 1 1/4 cups gluten free oat flour. To make oat flour, grind certified gluten free rolled oats until flour-like consistency forms.
