Instructions

  1. Preheat oven to 350°F.
  2. Coat a 9-inch pie dish with nonstick spray or oil. Set aside.
  3. In a large bowl, whisk eggs.
  4. Add spinach, artichoke hearts, scallions, nutritional yeast, salt and pepper. Mix together until combined.
  5. Bake frittata for 30-35 minutes at 350°F, until edges and top are brown and eggs are fully set. Serve warm with crusty bread (sourdough preferred). Enjoy!
