Transfer blended blueberry and milk mixture into a container or bowl with a lid and add vanilla extract, lemon zest, chia seeds, salt and sweetener (if desired). Mix together until well combined, cover, and refrigerate overnight, or for at least 30 minutes.
Serve with additional fresh (or frozen and thawed) blueberries in the morning. Enjoy!
