When you’re a busy mom, one of the first things that can go out the window when it comes to meals isn’t nutrition, but SATISFACTION. You can get stuck in a meal rut.
Maybe that looks like having a boring bowl of greens with rotisserie chicken every night. Or a boring freezer meal you rely on.
But spending just 10 minutes making this recipe can elevate so many “boring” meals!
Slather this earthy-with a hint of sweetness- Beet Hummus on…
- Sandwiches or wraps
- As a dressing for salads
- Carrots, celery, peppers, or your favorite veggies as a dip
While it may seem counterintuitive to spend time prepping ANY food when you’re in a busy season of life, in reality it can be a lifesaver!
Beet Hummus is…
- Savory, with a subtle hint of earthiness and a hint of sweetness
- Easy to make in the blender
- Made in 10 minutes (thank you shortcuts like pre-chopped garlic + packaged steamed beets)
- A fun addition to any meal
- A satisfaction booster!
I served this at my daughter’s 2nd PINK PARTY and it was a total hit, but is also a great part of a Valentine’s Day veggie platter…
Ingredient List to Make Beet Hummus
You only need 7 ingredients (including olive oil) to make this recipe. You’ll need:
- White beans or chickpeas as the base of this recipe
- Steamed beets are so easy to pop in the blender or food processor for this recipe. Don’t use raw beets because it won’t blend as well and the flavor isn’t the same
- Sunflower seed butter or tahini adds a richness to the hummus. I use sunflower seed butter for a sesame-free option.
- Garlic is necessary in any hummus recipe!
- Spices, like cumin, salt and red chili flakes add additional layers of flavor
- Olive oil helps emulsify the recipe together
