Air Fryer Sweet Potato Latkes

Air Fryer Sweet Potato Latkes are crispy, sweet and salty, and the easiest way to make the perfect potato pancakes every time! As a bonus, these healthy latkes won’t leave your house smelling like oil like traditional deep fried latkes do. They make a great Hanukkah side dish, but are also delicious to enjoy all year.

Ingredients

  • 3 ½ cups sweet potatoes, shredded (about 2 medium potatoes)
  • 1 small yellow onion, shredded, with water squeezed out
  • ½ cup flour (all purpose, whole wheat flour, or gluten free alternative)
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon oil (I used avocado oil)
  • Suggestions for serving: applesauce, sour cream

Instructions

  1. In a large bowl toss together shredded sweet potatoes, onions, flour, smoked paprika, salt and pepper.
  2. Mix in large eggs and oil until well combined.
  3. Using a ¼ cup measuring cup, scoop ¼ cup of batter and form into a patty using your hands. Place in the air fryer basket. Repeat so that you have one even layer of latkes in the basket. Don’t stack them! You may need to cook the latkes in batches.
  4. Set your air fryer to 375°F and cook the latkes for 6 minutes. Carefully flip the latkes and then cook for another 5-6 minutes, until the edges are crispy. Remove the latkes from the air fryer basket and place on a plate. 
  5. Serve with applesauce and sour cream. Enjoy warm!
